After a week with no pasta (I don't even know how that happened), I figured we needed to start the week off with a bang! I used @howsweeteats Butternut Squash Spaghetti Carbonara, except I subbed in pumpkin because that's what I had. I added a side salad with marinated fennel, capers, green onions and a dressing with a little bit of anchovies. The punchiness of the salad worked really well with the richness of the pasta. Also, carbonara is super easy to make and using the pumpkin cut the cheese in half. I'm thinking I could cut out even more to make this a more frequent meal. What's your favorite pasta dish?
