I love saving the seeds after carving pumpkins to toast up as a snack. Unfortunately for us the squirrels got to the pumpkin seeds before we even carved them this year (what sharp teeth they have!) so we didn’t actually get to eat any of our own. Decided to try out a variation from @lilynicholsrdn and toasted up some acorn squash (without rinsing off the gunk this time). Delightful! •
