I LOVE the DESIGN - the gorgeous Japanese cover binding is in silk fabric, the pattern taken from a vintage Japanese obi (a kimono sash) I bought in Kyoto many years ago when I lived in Japan.
ABOUT - The book is divided into ingredient categories like Japanese seasonings, Japanese spices, preserved, dried & fermented ingredients, tofu, noodles and rice, Japanese fruit and vegetables and more. Each ingredient is explained in detail within a chapter followed by a traditional Japanese recipe + 1 or more recipes created specifically for non-Japanese cooks. Beyond the Japanese ingredients in question, all other ingredients used in the recipes are readily available in any major supermarket. I hope you will find one or hopefully many recipes to encourage you to start using Japanese ingredients into your everyday cooking!

Some personal favourite recipes include the maple-soy cured salmon belly (roasted), the silken tofu with Burrata and clementine teriyaki and Japanese glass noodle (harusame) salad with crispy duck and umeboshi (pickled plum) dressing to name a few.
