The Smoked Duck 🦆 Ramen 🍜. 燻製鴨らーめん。The umami filled roasted duck and vegetable broth is “assari” (あっさり、simple/plain) but has “koku” (コク、rich/well-seasoned) and with deep smokey flavors. The ramen noodles are firm and with a slippery texture. Simply put a delicious dish! The word ramen (ラーメン、🍜) in Japanese originally comes from Chinese, Lamian (拉面). Up until the 90s, the word ramen was typically written in katakana marking it as a foreign word. But as ramen took on a new life and "Japanized", people started writing it in hiragana (らーめん). The only commonality between Lamian and ramen nowadays is that they are both soup noodles - the former is much simpler while the latter has evolved and also spread globally. Lamian originally comes from the culturally rich area of Shanxi Province (山西省), the home of noodles (麺食のふるさと), and the starting point of the Silk Road.
