Malabar Paratha: I've given a healthy twist to this recipe. Instead of refined flour I've used whole wheat flour, soybean flour and besan. Instead of adding ghee or oil, I've added whey of cottage cheese to make the dough soft. I've sprinkled some Readymade pickle masala for colour and spicy feel. A recipe with goodness of whey and soybean proteins. Try this and tell me how it worked for you. This recipe serves 7-8 Parathas, you can halve or double the recipe also.
🌸1 cup whole wheat flour
🌸1/2 cup soybean flour
🌸1/2 cup besan
🌸2 tbsp Readymade pickle masala or 1 tbsp Garam masala
🌸 Cottage cheese whey or 3tbsp hot oil or ghee for the dough
🌸 Oil or cooking spray for grilling
🌸 Salt to taste
🌸 Mix all the flours, whey, salt and water to make a soft dough. Cover it with damp cloth and set it aside for 10 minutes
🌸 Sprinkle some flour on your rolling board and make balls from the dough.
🌸 Flatten a ball with a rolling pin, apply a light layer of oil and sprinkle Readymade pickle masala generously.
🌸 Make pleats of the paratha and make sure to fold the first and last pleats inside.

🌸 Again flatten the roll with rolling pin and grill on the tawa.
🌸 Serve hot with your favourite chutney, here I've served this paratha with raw tamarind green chilli chutney.
