Feeling pretty discouraged at the moment. 😞My entire time as a reseller, part time since 2016 & really dedicated full time since October 2018, I have had nothing but 5 star reviews. I knew a negative review was bound to happen, I just didn’t expect them to be only a few days apart. & I didn’t expect them to hit me so hard lol I am a perfectionist, so mistakes just don’t sit well with me.
_____________________________________ I think I’m more upset because the 4 star review was about something out of my control (measurements completely disclosed on my description) and then 2 days later I get the eBay message. In hindsight, my packaging for the eBay sale could have been better, so I am trying my best to make it right.
I realize that the more active I become on the platforms and the more listings I have, the more sales I will have. Conversely, this also means that the likelihood of less-than-perfect reviews increases. Sadly, that realization really unmotivated me to list or share today. It made me feel like I’d rather just stay small & avoid the bad experiences. So I can’t let that mentality win. Joseph has worked in the hospitality industry for 20 years in the United States and Germany. He joined The Clement Palo Alto team in 2018 as our Guest Experience Specialist. Originally from San Carlos, CA, he spent over 10 years in Regensburg, Germany studying abroad and working in hospitality. His goal is to successfully oversee and operate a hotel as a General Manager. Bacon & Onion Jam From Executive Chef Mark Ayers Ingredients
2 lbs bacon, diced
2 yellow onions, diced
1 jalapeno, no seeds, diced
2 cloves garlic
1 t paprika
¼ bunch thyme
1 sprig rosemary
1 each orange (zest and juice)
1 oz ketchup
½ cup apple cider vinegar
2 T balsamic
¼ cup brown sugar
2 T maple syrup
½ cup chicken stock
Cook bacon in a large nonstick skillet until crisp, drain and save the grease
Use some of the bacon grease to cook the onions and jalapeno until tender
Add the garlic and cook a couple minutes longer
Stir in orange zest/juice, brown sugar, and ketchup. Cover and cook slowly for about an hour
Add half of the cooked bacon, vinegar, herbs, paprika, stock and maple syrup and cook 2-2 ½ hours, stirring occasionally, over very low heat. If it's getting too dry too fast, you can add a little water.
Cook until mixture reduces and remaining liquid is syrup. Don't over reduce!
Remove herb stems, and pulse in blender, add remaining bacon and blend slightly, don't make it smooth. Adjust seasoning.
Serve at room temperature with toasted baguette, crackers, cheese, sliced apples, pork chops or whatever!
