Who has eaten catfish before? 🙋🏻♀️🙋🏻♂️ How did you like it? Honestly, I don’t eat a whole variety of fish as much as I should, but Vietnamese carmelized catfish is probably the only other than basic fish I eat, besides what the sushi chef decides I should eat for the omakase menu.
To reduce the fishy smell, I pan fry the fish first until it’s half cooked through. Transfer to a plate, wipe of oils in the pan and add new cooking oil. Stir fry shallots, garlic, red chili flakes, place the semi-fried fish back in the pan, add the sauce (1 Tbsp sugar, 1 Tbsp fish sauce, 1 Tbsp soy sauce, 1 tsp dark soy sauce for color). Cook with the lid on for 5 min, flip fish and cook another 5 min. Remove lid and let the sauce thicken as it cooks a little more. Garnish with spring onions, ground black pepper. Watching Parts Unknown on a Sunday night before another start to the work week was a regular occurrence for us (another regular occurrence is B waiting to eat while I snap our eats 😅). So when Anthony Bourdain made an episode featuring Porto, we knew we had to try all the Portuguese food highlighted in the hour.
We tried tripas à moda do Porto and sardines fritas at O Buraco, a small traditional Portuguese restaurant in the neighborhood of Bolhão. The food was ridiculously good, and by far, one of the best meals we’ve had. Definitely worth a try for anyone who makes their way to Porto.
The Portuguese love their meat, and Porto’s beloved francesinha does not fall short in the meat category. It’s like the ultimate sandwich - layers of ham, Portuguese sausage, steak, and cheese sandwiched between two pieces of bread then layered again with cheese. And after all that, it’s drowned in a warm, slightly spicy tomato beer sauce that you soak up with each bite. Anyone else getting hungry? 🙋🏻♂️

Tadi nya yah gw pikir bangsa India doang yang suka melakukan aktifitas dimulai larut malam gitu. Bahkan mereka merayakan hari pernikahan ajah mulainya baru pukul 00:00 pagi. Bahkan pernah saat gw ke Mumbai n tinggal disalah 1 daerahnya justru mereka mulai ramai setelah pukul 00:00 pagi keatas
Nah setelah beberapa kali ke kota Solo, berkat info dari seorang "teman kencan" di kota Solo (oopsss 😊) ternyata ada kuliner yang enak dan seru itu dimulai dari waktu yang sangat larut. What??? Tentunya saat dengar cerita kuliner itu membuat gw sangat penasaran meski 'merusak' jam tidur gw. Bayangin ada penjaja makanan mulai bukanya pukul 11 malam dan konon banyak artis yg makan disitu katanya dan kalau mau yg lebih enak baru buka pukul 02:00 dini hari. Hmm rasanya mata ini gak kuat deh utk begadang pukul segitu. Akhirnya gw putuskan untuk datang ke yang pukul 11 malam dan penjaja Gudeg Ceker nya itu namanya Mbak Yus

Since everyone has been asking how to make this.
1. Prahok (fermented fish) in a jar
2. 5 cloves of garlic
3. Fresh peppers
4. Egg mint plant
5. Thai egg plants
8. Boiled hot water.
1. Cut up your egg plants into thin slices and add into a bowl of water to remove some of the seeds.
2. Wash the egg mint and remove the egg mint from the stem.
3. In a hot skillet on medium - add 5 cloves of garlic and as many pepper as you’d like and stir with a wooden spatula until it gets toasted then remove and put to the side.
4. In aluminum foil add your prahok (I used about 2-3 spoon full) depending on how much you are making. Put that in the oven for 5-10 mins with the aluminum foil closed and on low bake.
4. On a cutting board - add your toasted garlic and pepper and with a sharp knife start to cut/chop them on the cutting board then add your prahok and continue choppinh. With that being done, you will add a handful of your egg mints and chop and continue to do so until you have added all of the egg mints in and it starts to turn into a paste.
5. Once it turns into a paste - add that into your desired bowl and throw in your cut up Thai egg plants and squeeze in a few limes ( to your taste) and add in some boiled hot water.
6. Add spoonful of sugar (to your taste) then add in fish sauce if needed.
7. Stir and mix very well and add more sugar or lime (depending on what you are missing)
Serve it with rice, your desired meat, tripe, and veggies (whichever you prefer).
