This was one exhausting week 😅 I officially ended my summer laziness and went back to my regular schedule (gave myself a few weeks of less workload this summer to enjoy time with my babies ❤️). It kicked my butt 😂 I don’t think I can cook anything this weekend - good thing is Friday is pizza night, and then I’m sure we can live the rest of the weekend off a batch of slow cooker baked beans and waffles from the freezer, right?!

Using up the first bunch of our homegrown Rosemary. Roasted Heirloom Cherry Tomatoes, olive oil, sea salt, fresh ground black pepper, squeeze of lemon juice and rosemary baked in the oven and piled on top of grilled hearth bread, great weekend snack!!!! 🌿🍅🌿
I’m a wife and a mom, just like you. And sometimes life throws a few curveballs into the day and it’s dinner time, the kids are hungry, the parents are tired and sometimes it just feels easier to go grab something. 🍽
But guys, most of the time, it’s not worth it and ends up being more trouble than it’s worth, and then you’re spending extra money you’d rather hang onto for a date night out or for a preciously rare coffee treat.☕️
We had a night like this last week. The one meal we never made that week was more involved than what I felt like getting into and was wracking my brain trying to figure out what to make, when Grace casually mentioned how good cheese enchiladas sounded. I had leftover sauce in the fridge, tortillas in the pantry, and just enough cheese to make the meal. Which was awesome because nothing was going to waste and I was saving money.🌮
You need to have recipes with basic ingredients that you can reach for and make that hardly take any time at all.🍴

With Japanese food, respect for the primary ingredient is paramount. Adding more is not always going to make a dish better, and instead, adding less (or nothing!) is often preferred.

I don’t give a fig what anyone says, summer is the best season for fruit. Mainly because it’s the season for these little guys ~ black mission figs.
When I was a kid my favorite way to eat figs was in a Newton. Stuff fruit into any cookie and I’m guaranteed to like it. But as much as I like a good Fig Newton, I love fresh figs even more.
Anyone who knows me knows I also love chocolate. So when I came up with the idea for these Dark Chocolate Dipped Figs it was a eureka moment! 💡
They are simple, elegant, and delish AF. Zero plans this weekend? Then you need to make these now.

Dark Chocolate Dipped Figs
6-8 fresh figs
1/4 cup @theochocolate
70% dark, chopped
2-3 tbsp crushed toasted nuts, such as pistachios or walnuts
1. melt chocolate in a double boiler
2. slice figs lengthwise
3. dip bottom half of figs in melted chocolate, then dip in crushed nuts
4. pop in your mouth like candy *you can also do a shredded unsweet coconut or cacao nib variation

Ramen bowl for lunch. It's all about balancing the flavors- miso based broth, forbidden rice ramen noodles, chewiness from the sea weed salad, crunchiness from the purple kale and spicy roasted nori, earthy flavor from the mushrooms and creaminess of the egg yolks! Yumm!!
There isnt a meal I can think of that is $5 anymore.... maybe besides NYC's beloved dollar slice.
But wheatberries, avocado, spinach, cilantro ranch, pickled cabbage and pepitas for FIVE BUCKS. $5 LUNCH = FUNCH
