Ask and you shall receive!🙏🏻Since so many of you wanted to see more meal prep lunches and easy healthy dinner recipes, I decided step up my 15-30 min recipe game 💪🏻I give you pesto, cheesy cauliflower rice (top it off with whatever protein source your heart desires! Chicken, salmon, shrimp, grass-fed beef, chickpeas, whatever👏🏻)
•1 package of riced cauliflower (I got mine from @traderjoes
•1 tbsp of extra virgin olive oil (EVOO)
•1 c spinach
•3 tbsp EVOO
•2 tbsp walnuts •2 cloves of garlic •juice of 1 whole lemon OR 1/4 c lemon juice
THE ACTUAL GOODS:
•1/4 c feta •cilantro •protein source
1. Heat 1 tbsp EVOO in pan, add cauli rice and cook for 5-7 minutes.
2. While cauli is cooking, add all the pesto goods to a blender, food processor or @thenutribullet
(shameless plug, but I’m obsessed).
3. Add pesto to cauli rice and top with feta (nix it if you’re vegan or paleo or have issues digesting dairy), cilantro and protein source.
