It has been a little quiet from us of late as it’s been pretty busy at Holistic Nourishment head quarters. So proud of this young man a coeliac and type 1 diabetic and has had no insulin for 3 weeks. Through careful eating, liver cleansing, specific meal plans and targeted mindfulness his blood sugar levels have been pretty normal. I am working on all the information at the moment and researching like crazy to be able bring a program together that may help many people with the same condition. Gluten and Dairy Free Banana Chocolate Chip Muffins
1 cup Vanilla Greek Yogurt if dairy free use @lovemysilk
almond milk vanilla yogurt
2 medium ripe bananas
2 large eggs
2 cups @bobsredmill
gluten-free oats blended into flour.
1/4 cup brown sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup chocolate chips if dairy free use @enjoylifefoods
1. Preheat oven to 400F and prepare a muffin pan.
2. Add all the ingredients except for the chocolate chips to a Bosch mixer until the batter is smooth and creamy. Stir in chocolate chips by hand.
3. Pour mixture into prepared muffin pan, filling until it is about 3/4 full.
4. Bake for 15-20 minutes, until the tops of your muffins, are set, and a toothpick inserted into the middle comes out clean.
Then eat the whole pan, because that's what I do! 🤦🏼♀️

My belief in my company and the products we provide is strong, and the proof I have that these products work is overwhelming. We don’t do meal replacements, or weird skin patches, or offer products with questionable ingredients. We like to chew our food. We like drinks that taste good. We like plant based products that work with clinical trials to back up our claims. We like our strong loving community that works together with a goal to help people get their health back.

Trying some different recipes while Husband is traveling. I tried mapo dofu, which I hadn’t eaten since I lived in China 10+ years ago. I couldn’t find gf fermented black beans, which I think left my dish a little bland, but worth trying again. The other dish is Crockpot Braised Swiss Chard. The recipe called for “finely chopped” potatoes. I don’t know if I did what was intended. It was, again, a little bland. A comfort meal was on my menu tonight and this was a HUGE hit... 💯 gluten free beef brisket with carrots and potatoes (kind of like pot roast but a healthier version)🙌🏻😋. The brisket was super tender, easy to slice and the veggies had lots of infused flavors..YUM 🥕 🥕🥔

Roasted Beef Brisket with Carrots and Potatoes
1 pkg Beef Brisket (fat trimmed) I got mine at Trader Joe’s
2 yellow onions quartered
5-6 large carrots peeled and cut
1 small bag of yellow baby potatoes chopped in 1/4 chunks.
4 garlic cloves peeled, left whole
2 tbsp. Olive oil
2 C. Beef Broth
1 tbsp. GF flour
tbsp. Freshly chopped parsley .
Preheat oven to 375 degrees. .
In a large stockpot pour 2 tbsp. olive oil set to medium/high heat. .
Season beef with salt, pepper and 1 tbsp. GF Flour (top and bottom). Place in hot pan and brown for 4-5 minutes. Flip and sear on the other side. Take out of pan and rest on a plate. .
Add yellow onions in pan and stir to incorporate any drippings and until softened (3-4 minutes). .
Return brisket back to pan and place carrots, garlic cloves and beef broth in pan. Cover with lid and place in oven for 90 minutes. .
Take beef brisket out and cut into slices along the grain. Put back into stockpot and add potatoes and place back in oven. Bake for another 60 minutes or until potatoes are fork tender. .
Sprinkle with fresh parsley and serve hot. Enjoy!

It’s a place I’ve wanted to go to for a while but hadn’t had a chance. I guess the silver lining to celiac is exploring new places!
We started with the sangria (yum!), chips and salsas and the bean and cheese empanadas as appetizers.
They specialize in Venezuelan stuffed arepas, made with cornmeal dough. I had the pulled pork arepa with yucca fries and aioli verde.
Sooo good! Just the right balance of spice, perfect for a December night in Minnesota! They had a ton of small plates that looked fantastic. I think another GF happy hour is in my future!

For the non-bakers or popcorn lovers here is a fun, easy recipe for White Chocolate Candy Cane Popcorn. I have an ancient hot-air popcorn maker that works like a charm. For an edible gift fill clear cellophane bags with this popcorn and tie it with a pretty ribbon. Give generously!
12 cups popped popcorn, plain
12 oz melted white chocolate
1/2 cup crushed GF candy canes
Line one or two baking sheets with waxed paper or parchment paper. Set aside.
Put popcorn in a large bowl with lots of room to stir the mixture together.
Crush candy canes to measure 1/2 cup. Sprinkle over the popcorn.
Melt chocolate on the stove or in the microwave until smooth. Pour chocolate over the popcorn mixture and gently stir with a large spatula until evenly mixed.
Spread onto the prepared baking sheets and allow to cool and harden. You can do this in the fridge or outside if you are in a hurry.
Once set break popcorn into chunks. For a fancy presentation serve in a large glass bowl decorated with candy canes.

I’m posting my recipe below, but to be honest I totally made it up as I went- I’m sure you could substitute the type of meat and dairy! •
-1 pound ground chicken
-1 large egg
-1/4 c almond flour
-1/4 c shredded cheddar
-a bunch of spices• I used salt, pepper, garlic, onion powder, oregano, and parsley.
Cut 2 pieces of parchment paper to fit a cookie sheet and roll out in between (swipe right 👉🏼). Peel the top off and baked at 400 degrees for 15 min or until meat is cooked through. Then top with whatever your ❤️ desires and broil until cheese is nice and melty.
