I call this a Spanish omelette but it’s not quite there, perhaps a distant relative of the Spanish omelette. 😜
I’ve really enjoyed making different fillings and they’re very versatile, I’ve been able to eat them for breakfast, lunch and dinner.
It’s super easy to make, you just need a frying pan. 👏🏻🍳☺️
Fry ingredients for a little bit, if using hard veg then boil it down first until soft (this is a great way to use leftovers from the night before)
Add the 4 whisked eggs and fry for 5 mins and then put in the over with the grill and fan on for another 5 and you’re done!!! Easy peasy. 🍳 Next I want to add a feta filling.
I don’t meal plan very well... I work with whatever I have in the kitchen. Today I found some left over quinoa + 2 🥚 + 🍄 + inspiration from Indonesian dishes Ioved before..Voila! Breakfast is served ☺️😍. Open to meal planning tips though 🙏🏻
I do not have celiac disseas but I am sensitiv to gluten. So I have started to live without it. My problem is, that there are so many recipes on the internet, that it becomes hard to find those that actually work and do not have a lot of different ingrediens. So my journey starts with the pre-mixed flour types. My last post was of finax oatbread where you just ad water. Now I have made some from Urtekram. The recipe is on the their website, where you use their universal bakingmix. It turned out great and tastes delicious. I would recommend their birthday bun recipe.

Pastrami burgers for dinner, ‘pizza meatballs’ for the week (and freezer stash). Had a bit of meatball mix that wouldn’t fit on the sheet pans so we added some pizza sliders to dinner 🍁

Ladies and gentleman. It has been YEARS since I worked out four days in a row. A few years back, I had exploratory surgery done on an old inguinal hernia, and they found out the mesh had been ripped off of the hernia, and had caused it to reoccur. It was quite the emotional, frustrating experience to go through, and the time off from working out caused me to focus on other things, and fill my days with other priorities, and pretty soon my habit of working out, disappeared.
I have tried my hardest to get back into it, find something that I could stick to, tried to find that motivation. But nothing stuck. I was at a point in my life where I could honestly say I didn’t have time for the gym. Not if I was going to take care of myself at the same time.
But that reason ended up also becoming my excuse. My excuse for not even trying to find something that would fit into my busy schedule. But I woke up recently and decided I’m not letting that excuse keep me from the life I dream of.
Does anyone else feel like God gives you exactly what you need when you finally wake yourself up a little?! This lifestyle came into my life exactly when I needed it and I am so thankful to have said yes to this opportunity.
My day started at 5:00am today, I taught a class to one of my districts, I commuted almost three hours, I worked after I got home, I worked on my other business after work, and I STILL had TIME and ENERGY for my butt kicking workout. I’M IN LOVE!!! 🖤

CELIAC DISEASE and ANEMIA
Awesome story from Ryan Ritz Evans:
After I had my son in 2011, I began having major health problems. To make a long story a little shorter… I eventually found out I had Celiac Disease. Not eating gluten was a HUGE challenge for me. I was put on a ton of vitamins and even then I still had problems absorbing nutrients. I was told to see a hematologist. I would visit monthly and have my blood work checked, and every month (depending on my blood work results) I would receive iron infusions and occasionally blood due to my hemoglobin level being too low. Over the course of three years, I received an infusion every visit. My blood work improved a little when gluten was eliminated from my diet but it didn’t improve as much as it needed to.
A good friend of mine had been helping others with the Plexus products and she wanted me to try them. I was a HUGE SKEPTIC, but I tried it for 30 days. In the 30 days, I noticed a few changes. I was sleeping well at night without the use of sleeping pills. I felt I had enough energy to get through the day. My skin was looking better overall. AND… when I would occasionally CHEAT on my gluten-free diet I didn’t get sick! (Shhhh… don’t tell.) On the 30th day of taking the products, I happened to have an appointment with my hematologist. I was fully expecting to get an infusion and hear the same story I’d heard for the last 3 years. My doctor walked in and told me he couldn’t believe my lab work! ALL of my vitamin levels were up. Not just up… but GREAT. My hemoglobin level went from a 9 to a 14, and my Ferritin went from a 13 to a 40! I was in shock. The only thing I changed over the last 30 days was PLEXUS. I became a believer! I left the hematologist that day without having to receive an infusion. I have since returned to have my blood work checked and it’s been perfect. I have even received a text from my doctor telling me he can’t believe how great my lab work looks and to keep doing what I’m doing. Plexus is now a part of my daily routine. It’s easy and I love it!
Soooo this is why I haven’t been sharing my food as much. It’s super plain, and pretty ugly. And it’s not vegan. I’m currently doing a version of Autoimmune paleo in an effort to try and heal my body. I don’t really feel like explaining myself and intend to write a full post about why and how I feel about it ect ect. But basically this is what every meal has been looking like for me- cabbage, kale, green beans, pastured local chicken from a farmer I personally know in NY, turmeric, olive oil, and Himalayan sea salt for those guuuud minerals. Oh and my stomach is in this pic totally NOT looking super taught.. but whatevs! Annnd I totally fell off the wagon with GF cookies tonight 🤷🏽♀️ happens. But I’m trying not to beat myself up about it or freak out. Anyway this is a healing jourrrrrney and I’ve still got a ways to go but I’ve been so weird about posting because I’ve felt like I couldn’t totally be honest w you guys since I know a lot of my followers are vegan. I still care about the same things and still think factory farming is evil and destroying our planet, and I KNOW how harshly I wouldn’t have judged someone 6 months ago for the same thing, but you never know until it’s your life and health that are unraveling, and that’s not to say I won’t be plant based again someday! But right now this is my truth and I’m going to stop letting fear of losing followers or being judged dictate my life. I’ve actually been getting pretty good at making simple meals for my whole day in 30 mins before work, so let me know if you wanna see more of this ugliness! Hah xx F
🙌Air Fryer Almond Chicken Success!!!🙌 😍So successful that Willow ate her portion and my portion (good thing we had leftover meatloaf in the frig😏)!!! 👉Recipe because I know you will want to try it out! ▶I used my meat tenderizer to pound chicken thinner. Then I placed the chicken breasts in a ziploc bag with some pickle juice (didn't measure....just poured some in😂). Zipped close and gave it a bit of a shake to coat the chicken. Then I placed it in the frig to marinate for about an hour. ▶Removed chicken from bag and patted dry with paper towels. Cracked 1 egg in a small bowl (seasoned egg with some salt and pepper) and scrambled it. On a plate I poured some almond flour (probably 1/2 cup). Seasoned with salt, pepper, and garlic powder (paprika and some cayenne would be a great addition as well). Mixed seasoning and almond flour. ▶Preheated air fryer to 370° and then sprayed some coconut oil to the basket to help keep from sticking. ▶Placed chicken in the egg and then coated both sides in the flour. Used tongs to remove chicken from the plate of flour and lay in the air fryer basket. ▶Baked for 8 min on 370° and then flipped. Adjusted temp to 400° for an additional 6 minutes. Times will vary slightly depending on how thick how chicken is. Chicken will be golden brown and crispy with a juice inside!! ↪This recipe could be used with chicken tenders or drumsticks↩
