Chicken Tikka Masala
600 g/ 1.2lb chicken thigh, 3cm / 2.2" cubes
1/2 cup plain yoghurt, 6 cloves garlic minced, 1 tbsp grated ginger, 1 tsp garam masala, 1 tsp each salt, cumin, coriander, paprika, 1 tbsp vegetable oil, 1/8 tsp cayenne pepper, pinch black pepper, 2 tsp lemon juice
Cooking Chicken: 1 - 2 tbsp oil (Note 3)
Curry Sauce Spices: 2 tsp turmeric, 1 tbsp garam masala, 2 tsp coriander, 1 tsp cumin, 1/8 tsp cardomon, 1/8 tsp cayenne pepper
3 tbsp / 65ml vegetable oil, 30g / 2 tbsp unsalted butter, 1 onion finely chopped, 1 tsp salt, 2 tbsp grated ginger, 6 cloves garlic minced, 1 tbsp paprika, 1 2/3 cups tomato passata (tomato puree), 1 2/3 cups water, ½ cup cream, 1 tsp sugar, 50g / 3 tbsp extra unsalted butter
1. Mix Chicken marinade, add chicken, marinate 3 – 24 hrs.
2. Heat 1 tbsp oil in non stick pan over high heat. When smoking, add half chicken. Leave to char, then turn and char other side. OK if not cooked inside. Repeat with remaining chicken.
3. Sauce: Wipe pan with paper, turn down to medium high. Add oil and butter, then cook onion, ginger and salt for 5 min until ginger is golden.
4. Add paprika and garlic, cook 2 min. Add passata and water, cover, simmer on low 15 min. Blitz with hand held blender. Add cream, sugar and extra butter, then add chicken. Simmer until chicken cooked through. Serve over rice. . (via @/recipe_tin )
