👏The magic oven number of 400 degrees. You can roast/ bake everything at once! Prep it, olive oil S&P spices etc, put in on baking sheets and voila in an hour or less all your main items are cooked 🍴
Chicken Breast (to 165deg) take 20-35 min at 400
Sweet potatoes wrapped in foil- one hour or coins 20-40 min
Roasted Veg 20-30
Fritata (a bunch of eggs and veg beaten together and put in a cast iron pan or baking dish 35 min (or egg cups 25 min)
Meatballs 20 min!
Keep it simple!
Pick few items to make in the oven, a few salads, some cut fruit and nut or seed butter and hummus for dipping and voila- your prepped for the week. No guess work- no getting home from work, starving and no clue what to eat.

goat cheese + honey Brussels sprouts. a little extra flavor takes these bitter cruciferous veggie to the next tasty level!
all you need is Fiesta Veggie Sprinkles seasoning, olive oil, goat cheese, honey, and Brussels sprouts.
• cut brown ends and yellow leaves off Brussels sprouts, then slice lengthwise into four pieces (for quicker cooking and crispier sprouts!)
• toss bud pieces evenly in olive oil and Fiesta seasoning *enough to thinly coat*
• spread evenly onto cookie sheet coated with nonstick spray
• bake in convection oven at 425 degrees F for 30 minutes (*or until pieces are browned & crispy)
• remove pan from oven and using spatula scrape pieces into a slight mound in the middle of the cookie sheet, and then sprinkle 1/4 cup to 1/2 cup goat cheese on top
• return cookie sheet to oven and cook until cheese is melted approximately 5 more minutes
• take Brussels sprouts out of oven, drizzle with 1 Tbsp honey and serve immediately
this is a great side dish that accompanies any main! ALSO the leftovers still taste delightful - which is a huge selling point for me... sadly I have to seriously dress up leftovers to eat them willingly lol 😅

Chocolate peanut butter protein balls. Recipe 1/4 c coconut flour, 1/4 c maple syrup, 1/4 c protein of choice (used chocolate vegetarian coconut whey), 1/4 c cacao powder and 1 c natural nut butter (almond or peanut). Finally a post after sooo so long. Rest assured I’ve always been food prepping, I’ve just been slacking off big time with the posts since it was one less thing to do throughout this busy year of multiple tasks and weddings (including my own 😊). Anyways, I’m back on board with making the food ferments starting with my fav - sauerkraut! The most work involved really is cutting up the veggies but it’s SO easy to prep on your own. For my sauerkraut mix I have 1 red and green cabbage, 4 carrots (that’s all I had left but I Could’ve use a few more), and rosemary. Added a generous amount of salt, smashed up with a potato masher and my hands until it was watery, and put them Into 2 large mason jars pushing them down with my handy vitamix wand. GAME CHANGER || I always struggle with lunch options. The whole “meal prep” idea bores me but this idea has made my life so much easier!!!
Simply fry up ALL the veggies - absolutely anything goes - here I have onion, leek, broad beans, peppers, sweet corn and mushroom. Place cooked veg in a dish, pour over 4 whisked eggs, sprinkle on some cheese and bake in the oven for 20 mins. Hey presto - cut into squares and store in the fridge for lunches!! 👊🏻

Today was a long and very tiring day. I was starving at lunch and couldn't wait to go home and eat this creamy slow cooker onion soup chicken! It only takes 2' to prepare it and it's less than 250 calories! Today I want to share with you an easy meal prep recipe. Eggplant Stacks!🍴🥑🍆Here is a vegetarian dish that is my healthy take on Eggplant Parmigiana. And it’s so simple:
Slice & Roast eggplant on avocado oil lined cookie sheet in the oven 400 degrees for 20 min. Meanwhile, sauté chopped garlic and onion in olive oil on the stovetop on low. Once translucent, add 1 can tomato paste to the oil ＋ Italian herbs. (Adding paste to the oil and allowing to cook and slightly brown deepens the flavor.) Once you have some caramelization on the paste, add 1 cup bone broth and 1 cup chopped tomatoes. Stir and simmer until thickened. Salt to taste.
Layer eggplant, creamy French feta, sauce, fresh parsley and basil and enjoy!

Oatmeal is definitely one of my go-to recipes in the morning. Ayan always has oatmeal mixed with whole milk yogurt, nut butter and fruit (usually strawberries and bananas), and Layla will eat it just about any way I make it!
This particular recipe was oatmeal topped with stone fruit & granola - which was absolutely delicious and perfect in the summertime. Now that we're in fall/winter - I cut up pears and apples and mix them into oats.
An easy way to prep is to actually cook the oatmeal ahead of time and cut the fruit in advance, so all you have to do in the morning is assemble and reheat! Cooked oatmeal will last up to 4 days in the fridge - so you can cook it once and eat it almost all week long! 💯
