Chicken “stir-fry” stuff. 😂 I’m not sure what to call this, but it was delicious. I also took advantage to try TWO new things! I finally tried riced cauliflower and a new sauce! To be honest, I did not think I was going to like the cauli-rice, but I was really surprised to see I didn’t miss actual rice too much! As for the sauce, I most definitely did not need to add chili flakes to the veggies before 🥵😂 •
When I made this recipe in my app, I said it would feed two people... it can totally feed more! I took about half and could not finish because it was SO MANY veggies. I’m still having a hard time learning that just because I have no starch (rice, potatoes, etc), I WILL get full on veggies 😂 (what are portions with veggies?!) •
In total with the sauce and the oil to cook, this meal came to 450 calories if I split it in half... in reality, it’s probably closer to 300 if you split it into 3 portions like it should be (at least). •

Health officials in the U.S. and Canada told people on Tuesday to stop eating romaine lettuce because of a new E. coli outbreak.
The U.S. Food and Drug Administration said it is working with officials in Canada on the outbreak, which has sickened 32 people in 11 states — including 10 in California — and 18 people in the Canadian provinces of Ontario and Quebec.
The strain identified is different than the one linked to romaine earlier this year but appears similar to last year’s outbreak linked to leafy greens.
FDA Commissioner Scott Gottlieb said the agency doesn’t have enough information to ask suppliers for a recall, but he suggested that supermarkets and restaurants should withdraw romaine until the source of the contamination can be identified.
The contaminated lettuce is likely still on the market, Gottlieb told The Associated Press in a phone interview Tuesday.
He said FDA wanted to issue a warning before people gathered for Thanksgiving meals, where the potential for exposure could increase.
“We did feel some pressure to draw conclusions as quickly as we could,” he said.
Most romaine sold this time of year is grown in California, Gottlieb said. The romaine lettuce linked to the E. coli outbreak earlier this year was from Yuma, Arizona. That outbreak, which sickened about 200 people and killed five, was blamed on tainted irrigation water.
No deaths have been reported in the current outbreak, but 13 people in the U.S. and six in Canada have been hospitalized. Apple Cider Baked Apples 🍎 🍏 This recipe screams HOLIDAY and it’s simple & healthy and will make your house smell divine! You can pop them in the oven while eating dinner and they will be warm and ready for dessert. You can eat them with dairy-free ice cream or drizzle them with your fav syrup. Made by @dianemorrisey
2 cups apple cider (1 cup reduced)
1 tsp pure vanilla extract
6 firm baking apples
1 Tbsp fresh lemon juice
2 Tbsp dark brown sugar
1 Tbsp all-purpose flour
1 tsp ground cinnamon
1/2 tsp fine sea salt
2 Tbsp unsalted vegan butter, cubed
2 tablespoons dark rum
1/4 cup chopped walnuts (or any nut)
Preheat the oven to 375F.
Add the apple cider to a skillet and bring to a gentle boil. Turn the heat down to medium, add the vanilla, and continue to simmer until the cider has reduced by about half, 10-15 minutes. Remove from the heat and set aside.
Meanwhile, cut the tops off the apples and using a sharp knife, remove the core leaving a little at the bottom to keep the filling from spilling through. Place in a baking dish and drizzle with the lemon juice.
Stir together the brown sugar, flour, cinnamon, and salt until combined. Use the back of a fork to mash the vegan butter and rum into the sugar mixture, until incorporated. Add the nuts, and use your fingers to crumble the mixture together.
Fill each apple core with the mixture, and top with the apple tops. Pour the reduced apple cider into the bottom of the baking dish and bake until the apples are cooked through, about 40-50 minutes. Baste a few times with the cider while baking. Serve the apples warm with the reduced cider sauce and ice cream.

Vegan chickpea sandwich! Why make chickpeas into hummus when you can add them straight like this to a sandwich? By @vegantraveleats
Ingredients for 4 sandwiches:
2 15 oz cans chickpeas, rinsed, drained, and pat dry ¼ cup sliced celery
¼ cup diced red onion
2 tbs raisins
¼ cup roasted cashews, coarsey chopped
3 tsp fresh lime juice
¼ cup plus 2 tbs vegan mayo of your choice
1 ½ tsp curry powder
½ tsp dried ground ginger
½ tsp agave
1/8 tsp salt
8 Romaine lettuce leaves
8 slices bread of your choice (if you’re using bread that isn’t crusty we recommend lightly toasting it)⠀
In a medium bowl combine lime juice, mayo, curry powder, ginger, agave, and salt, stirring really well.
Toss in the chickpeas, celery, red onion, raisins, and cashews, stir gently until combined. Divide lettuce leaves evenly between 4 slices of bread and divide chickpea salad on top, enjoy!
Make Ahead Tip: This is a GREAT make ahead meal for a trip to the beach, a road trip, or even just to keep in the fridge for a fast and easy lunch. Just leave the cashews out and mix them in right before you eat so they don’t get soggy, load onto a sandwich. Enjoy!
