I can’t tell you how many times I threw up at the gym, or sat in front of my computer with tears in my eyes and feeling clueless . Or how hard it is to keep believing in yourself when you are constantly being judged for mistakes you made it the past.

• 1 1/2 Cup frozen banana chunks
• 2 cup frozen pumpkin purée chunks (for the pumpkin purée I simply bake my pumpkin in the oven and then mash everything with my blender)
• 1 tbsp vanilla extract
• 1/2 tbsp cinnamon
• 1/2 tsp nutmeg
• 3 mashed dates (if you want more sweetness)
• persimmon cut outs
• apple cut outs
• amaranth and quinoa pops

I wait a few minutes until the frozen pumpkin and banana chunks thaw a little. Then, I throw everything into my blender and blend on high speed until everything is nice and smooth. I hope you enjoy this as much as I do! 🧡
Lotte’s Pumpkin Soup 🎃🍂
Hey you lovely people! I’m finally back with a post and I want to share with you my favorite pumpkin soup in the whole wide world! It’s a recipe I used to make for years and it just doesn’t get old 🧡
I hope your fall season is going great and that your socks are super cosy and your sweaters wide and comfy! How do you make a rainy and windy day as comfortable as possible? Let me know ☺️
• 6-8 potatoes
• 1 Hokkaido pumpkin
• 2 medium sized leek
• 3 shallots
• 3 red onions
• 1 cup (250g) Alpro GO ON
• 1 Tbsp Olive oil
• 67-101 oz (2-3 l) Vegetable stock
• 1 tbsp fresh orange juice
• 1 tbsp Balsamico vinegar
• 1 tbsp marjoram
• 1 tbsp sweet paprika
• 1 tsp cayenne pepper
• 1 tsp turmeric
• 2 tsp curry
First, I peal the potatoes and cut them into big chunks. Then, I wash my pumpkin, cut it into two and scoop out all the seeds. The pumpkin has to be cut in chunks as well. After that, I chop the onions, the leek and throw them into a big cooking pot with the olive oil. I stew the onions and leek for a while and then add the potato and pumpkin chunks. I gently roast everything for about 5 minutes and afterwards add the vegetable stock. Everything has to simmer on low medium heat for about 40 minutes and then mashed with a hand held blender until everything is blended together. Now, it’s time to add the orange juice, balsamic vinegar and the Alpro. I also season everything at this point with the mentioned above spices and adjust the salt and pepper however I feel like! In the end, I taste everything and garnish the soup with a little more Alpro. Enjoy 😘
