Manuka smoked Waikato eel with a thin layer of eel mousse that has been double smoked in cream to give another layer to the eel, glazed with sweet soy mirin and then topped with chives that have been marinated in a salted oil concoction for 4 hours to really develop the chives flavour. .
A fragrant broth made with lemongrass and the bones of the eel, burnt coconut puree, which also made a byproduct - burnt coconut oil that was used to enhance the broth and to finish it up, the beautiful Piko piko has been lightly chard and seasoned with fresh lemon and tri colour peppercorns.
