If you want to be amazing now, and do amazing things for a very long time, start by paying attention to what you eat. Being in NYC, I come across a lot of people on a day to day basis. It's unfortunate to see large swathes of them look dead and/or dying (literally and figuratively), when really, all it takes is a behavioral change. I understand that yes, it might not come easy for most people, but with enough persistence, every passing minute is chance to turn things around; this holds especially true for food intake. . * I dont mean for this post to sound all preachy and sh*t, but yes, I do genuinely care about the well being of my friends, family and fellow athletic competitors. I want everyone to live a very healthy, happy life.....I'm a firm believer that knowledge should be shared, and for those of you that know me, know that I'm constantly reading and learning and most importantly, applying. I'm never the kind to impose, so I try my best to become an example. Ital sup for tonight’s dinner featuring fresh pinto beans stew. I came across these fresh pinto beans during my weekly fruit and produce run at Praça de Estrela this morning and thought they were so pretty that I decided to buy them to make for dinner. These are organic and CV grown pinto beans. There was a lady taking them out of their pods and restocking as I purchased them. [SWIPE] to see before I cooked them, how pretty are they?? In Cape Verde when beans are fresh and not dried like this we say that they are “green.” When was the last time you had some fresh beans? Better yet, do you grow your own? I would like to someday 😊. They are a little more expensive than the dried variety but the taste is definitely worth the occasional treat. Today’s stew is vegan with squash, sweet potatoes and cabbage. * * * * *

Dinner time. Traditional Cape Verdean food done my way with dried and salted fish. Growing up, on my island, I remember eating and seeing salted fish once a year, around the Lenten and Easter season. It was cooked very plainly, simply boiled to remove the salt and served with boiled vegetables like kale and potatoes, sprinkled with salt and drizzled with olive oil. But I still liked it. I made my salted fish a little different with potatoes, sautéed onions, red peppers, and chickpeas. I sautéed the onions separately with the red peppers and assembled everything and baked it to finish it off (Swipe to see before it went in the oven 🙂) Delicious! * * * * *

Hi everyone. I am calling tonight’s dinner “For the Love of Food Preservation” vegan curry. This is is because I threw practically every single vegetable that I bought in this week’s produce restock because I want to make sure they all get used by the end of this week and that none goes bad. I buy my produce in small quantities, because we live so close to the produce market, and that is how I do food preservation in an average week. This vegan curry has butternut squash, sweet potatoes, daikon radish, eggplants, collard greens and chickpeas. It was delicious. * * * *

Nice and easy weekend dinners 🙂. This week we have pan seared marinated chicken breast sandwich with lettuce and tomatoes. Delicious and no more than 30 minutes to prepare. After a long week of work, mom duties and plenty of other things to do this is the perfect break in my week. Don’t get me wrong though, I am not complaining. Quite the opposite. I am grateful for the life that I live, for the time that I get to spend with my children, to have a job that I enjoy and allows me to live the life that I want. I’m grateful to have my days and my hours filled with things to do. And grateful for strength and motivation to continue to live and pursue my goals. Purchase of the day from yesterday... pomegranate!! I was so happy when I came across these during my unsuccessful search for balsamic vinegar. Pomegranates are one of my favorite fruits and they are not always available here in Cape Verde, which makes them a treat that can’t be passed up. Over time I’ve made some modifications to mine and make it as a main dish. I am callling this a sautéed cabbage with baked squash and daikon radish and pigeon peas served with a little jasmine rice.
