El Hidalguense. Remember that name if you’re ever in CDMX. They are only open on the weekends and specialize in barbacoa. They steam lamb inside maguey leaves and also offer 3 types of pulque (sweet fermented agave beverage) to balance the fatty meat. The menu has more options too.
