Hello there foodies!
So I have an obsession with fritters this ones are gluten free. Using gram flour which is also on average has 44% fibre and 22% protein against plain flour which is on average 10% fibre and 10% protein. This recipes also have lots of veggies in too!
Crogettes grated x 2
130gs of sweetcorn
170g of feta
X 1 large egg
Half a teaspoon of paprika.
Half a teaspoon of cumin
Salt and pepper 70g of gram flour if the mixture is too wet sprinkle a little more the gram flour in
Grate the courgettes and remove and remove the liquid from them placing them in a sieve and pressing with you hand.
Add the everything into the mixture and crumble the feta in last. Stir the mixture slowly making sure it’s all combined.
Fry them the oil of your choice, I use rapeseed and cook for approx 2-3 mins on each side until golden brown. Serving créme fraîche and chutney compliments these fritters making them delicious heaven.
