Here’s a sneak peek at places I’m going to share with you about Athens. Diporto Taverna is a hidden (literally bc it was in an unmarked cellar of a building that is 150-years old) spot in the Monastiraki neighbourhood. They don’t have a menu and very limited English so they just bring your hearty, authentic Greek dishes of the day like these fresh, grilled sardines 😻

Protien on protien on protien 💪💪 Fill up on these Tuna Salad and Roasted Chickpea Wraps made using our Premium White Protein Wraps—recipe below!
Tuna Salad and Roasted Chickpea Wraps
1 can (15oz) chickpeas, drained, rinsed, and patted dry
2 teaspoons preferred vegetable oil
½ teaspoon fine sea salt, divided
½ teaspoon black pepper, divided
Two 5oz cans albacore tuna packed in water, drained
1 rib celery, diced
3 green onions, thinly sliced
¼ cup low-fat Greek yogurt
1 tablespoon lemon juice
2 Tumaro’sⓇ 8” Premium White Protein Low-In-Carb Wraps
4 large butter lettuce leaves
1. Preheat oven to 450℉. On a large baking sheet toss chickpeas with oil, ¼ teaspoon salt, and ¼ teaspoon pepper. Roast, stirring every 10 minutes, until browned and crisp, about 30 minutes.
2. Meanwhile, in a medium bowl combine tuna, celery, green onion, yogurt, lemon juice, ¼ teaspoon salt, and ¼ teaspoon pepper. Stir to combine.
3. Lay out wraps on a countertop and top with 2 lettuce leaves each. Divide tuna salad between wraps, and sprinkle chickpeas on top.
4. If desired, fold sides of wrap in, then fold bottom of wrap over filling and roll up tightly. Cut in half.

As you can see from my feed I do love pumpkins 🎃🎃! I recently made this Gluten Free Pumpkin Cranberry Bundt Cake with Salted Maple Glaze and Toasted Pepitas! The maple glaze with Maldon sea salt flakes really takes this cake to another level. The toasted crushed pepita seeds adds a lovely color contrast and the perfect crunch.
And if you wondering what I did with the remaining glaze, I poured it over some left over scones and ate it! 😆😆

avocado spray, bake at 400 for 30-40 mins, sprinkle with sea salt), pomegranate guacamole🥑(mix together mashed avocado, garlic salt, lemon juice, cilantro & pomegranates) & grapes🍇.
Almond Crusted Chicken Tenders
1/3 cup crushed almonds (blend in food processor)
1/2 tsp garlic powder
1/2 tsp thyme
1/2 tsp dried parsley
1/4 tsp salt
Pepper, to taste
1 egg, beaten
1. Combine all dry ingredients.
2. Dip tenders in beaten egg & then dip in dry mixture.
3. Spray pan with @chosenfoods
avocado spray & cook tenders on medium high for 2-3 minutes each side. (Recipe is for 2 large tenders)

Wishing I had this giant warm bowl of oatmeal for breakfast this morning with alllll the toppings 🤤 unfortunately my breakfast looked nothing like this this morning. I completely knocked around 10pm last night, shortly after I ate dinner and stayed knocked out until about 7am THIS MORNING. And when I say knocked out, I mean like I didn’t even do the dishes or anything- just straight up passed out. But the funny thing is I didn’t feel energized and ready to take on the day even after I went to bed superrrrr early last night. I guess this means my body is burnt out, both physically and mentally and is a sign that I should slow down a bit at times and take a moment to reconnect my body with my mind. The human body is not built to be a machine that can continue to work indefinitely. At one point, your body will experience a complete burn out, so this is a kind reminder to take care of yourselves ✨
Thankfully, I always have “dry oatmeal” mason jars ready to go in my kitchen at all times. I prep these jars with all the dry ingredients (oats, protein powder, maca powder, flax seeds, chia seeds) and leave them sealed until the night before when I add in my fruits and almond milk. So this morning I grabbed a dry oatmeal jar on my way out and filled it with some almond milk when I got to work. Chopped up an apple and gave my oatmeal jar a good shake and voila! Breakfast was as simple as that 🤩

I always remember my parents and the neighbors having several cocktails while all of us trick or treated. Sometimes it was spiked apple cider, mulled wine, and I remember there being coffee chocolate tequila too! In order to live up to that tradition, I figured these were a perfect festive, candy inspired cocktail to enjoy on Halloween! 🎃

Let’s talk about MANIFESTATION! If you don’t know what manifestation is there’s a million definitions, the two that stand out to me most are:
A) a perceptible, outward, or visible expression •
B) a public demonstration of power and purpose •
The definitions seem abstract which gives YOU the room to take it as you want. One way I see it is as developing an IDEA into a FACT. If you’re brand new to manifestation and manifesting desires this is the basics of what you need to know:
-it takes 17 seconds of focusing on something for a vibration to become activated
-as the focus becomes stronger, the vibration becomes clearer (and you’ll be brought to even more thoughts that match that vibration)
-the longer you maintain your focus, the power of the vibration becomes stronger
-and finally, if you manage to stay PURLEY FOCUSED upon anything for as little as 68 seconds, the vibration is powerful enough for a manifestation to begin
Why did I tell you all of this? Because it WORKS and because I literally manifested this dinner.. For example:
-this morning my friend paco asked me what my favorite fruit was and I thought about it and was like ehhh probably pineapple at the moment
-after teaching I bought a MASSIVE bag of peanuts and my reasoning was because we hadn’t been fed a lot of tofu lately and I missed it and wanted some extra protein -to top it all off today when I walked to fill up my water bottle, I smelled something coconutty cooking and I thought to myself “mmm that smells really good,” and then I thought “I hope we’re having curry for dinner,” which turned into “I really want to have the pumpkin curry they made us that one time it was so freaking good.” And then I literally imagined myself eating the curry and how happy I felt when I had it.. flash forward to over an hour later and our dinner was THOSE THREE FOODS EXACTLY!! Take it as you want it, I promise I KNOW that manifestation works and I had to share because it’s something so powerful and something that I use daily. Yes this was something as small as dinner, but you can apply this process to ANYTHING no matter how big. I hope everyone enjoyed my insane story and takes something positive out of it! 💘

1/2 cup rolled oats
1 cup water
A splash of oat milk
A pinch of pink himalaya salt
1 teaspoon sweetener of choice (optional);
Combine oats, water, oat milk and salt in a medium saucepan. Let it soak for a few min. Being to a boil then reduce heat to low. Simmer uncovered for a couple of minutes, stirring occasionally. Remove from heat and let cool slightly. Add sweetener and stir well.
Quick and easy breakfast this morning!
2 scrambled eggs with onions and garlic served with a piece of multi grain bread and half a tomato. Along with @califiafarms
pure black unsweetened coffee this was the perfect breakfast 🤗

I’m glad I’m at a place now where I can notice those thoughts and call myself out on them. If I genuinely love something, look forward to enjoying it, and am craving it at that time, there is no way I’m going not going to make it simply because I feel l need to add more variety to my Instagram page. how silly is that?!
