Pancakes with mixed berries, nuts and vanilla ice cream
I really don’t like the photos I took BUT I can’t not post about these amazing pancakes I ate back in August. The visual, especially in person, simply makes you speechless. Those super thin sliced strawberries are arranged articulately into a fan-shape and it’s just so beautiful. The pancakes are thick enough to give it a good density but fluffy and moist enough so that it’s not stodgy (style of Japanese hot cakes). The texture was excellent. There’s a nice variety of berries - strawberries, blueberries and blackberries - which make the dish refreshing, flavourful and light. The mix of nuts (walnuts, cashews, pistachios and almonds) not only add to the flavour but also gives it a nice contrasting texture. The amount of syrup is also well judged, as it gives it a little sweetness but not overly so, considering there’s the sweetness provided by the ice cream.
