What is Thanksgiving without sweet potato casserole?!
For as long as I can remember, it has been my favorite dish at Thanksgiving! (And for the record, #marshmallow
topping or bust.) It is super easy to make, and also super easy to make #allergyfreindly
! It will be a hit among both kids and adults.
What you will need:
7-8 sweet potatoes
1/2 stick butter (or 1/4 cup Earth Balance for #dairyfree
1 cup sugar
1 Tbsp vanilla extract
Sprinkle some cinnamon
Marshmallows for topping
- Bake the sweet potatoes at 400 for an hour (or more if they are thick)
- Peel and mash them
- Mix with the butter or @earthbalance
, sugar, vanilla and cinnamon
- Use a hand blender to get a super smooth texture
- Turn oven off of bake and set to Broil
- Pour marshmallows on top
- Broil for 1 - 2 minutes, or until marshmallows begin to brown (Make sure you watch them!)
If you want to make it in advance, do everything but the marshmallow topping, cover with foil and place in fridge until ready to bake. When ready to make it, keep the foil on and bake at 350 for an hour, or until heated through, then add the marshmallows and broil!
For easy clean up, line your baking pan with foil (dull side up) and mash/mix the potatoes in your casserole dish! If it gets messy, wipe clean with a paper towel around the edges.
To travel with it, I always heat it at home and then do the marshmallows when I get to where we will be eating.
