Sourdough is as ancient as bread-making.
Roland Feuillas does not use sourdough to be fashionable.
Sourdough means to him making the most digestible and nutritious bread - thanks to the microorganisms responsible for the fermentation and leavening process.
Roland Feuillas only uses pure wheat sourdough (one type of wheat>one type of sourdough), thereby giving all his breads a unique flavour.
