Yields: 12 pancakes
1 package cinnamon apple oats, Modern Oats
1 ½ cups plus 2 Tbsp buttermilk, divided
¾ cup whole-wheat flour
1 ½ tsp baking powder
¾ tsp baking soda
½ tsp cinnamon
⅛ tsp grated nutmeg
½ tsp kosher salt
1 extra large egg, lightly beaten
1 tsp vanilla extract
3 Tbsp unsalted butter, melted
1 Tbsp packed brown sugar
2 Tbsp butter
Fruit, for serving
Maple syrup, for serving
Place oats in a small bowl and soak with ¾ cup buttermilk for 15 minutes.
In a large mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a separate bowl, whisk together egg, vanilla, butter, brown sugar, remaining buttermilk. Pour into dry ingredients, along with the buttermilk-soaked oats, and stir gently to combine. Let pancake mixture sit for 15 minutes before cooking.
Heat a large griddle or cast iron skillet over medium-low heat, then melt 1 Tbsp butter. Using a ¼ cup measuring cup, pour batter onto griddle and cook until small bubbles appear along the edges and surface and the bottom turns a golden brown, about 1-2 minutes. Flip carefully and continue to cook on other side, about 1-2 minutes more. Grease griddle with additional butter as needed.
Serve pancakes with fresh fruit and maple syrup.
