CUSTARD MOONCAKES 🌙 #dairyfree
custard cream. #beefree
Project Mooncake is an attempt to ask us rethink the source of our food and the relationship of food and celebration. We question if dairy is the only product that brings out the flavours of #mooncakes
- or we have been overlooking what’s available around us?
“Eat less message” message is coming through loud and clear. We all know too much meat is not good for our health. Its production is a major contributor to global warming. But on festive occasions, it seems like more of a challenge to everyone given our traditions of celebration often involve serving large amounts of meat as a centrepiece. Rejecting what your seniors has prepared for you seems to be a disrespectful act amongst Asian families.
Food brings people together and create experience. Instead of saying eating less meat is depriving yourself, we are finding ways for updating our traditions that bring us more joy and for many more happy moments with our families and friends: a celebration table with more variety, with less impact and with less impact and with tonnes of taste. Food brings people together and it is up to us to create something truly special.
For our festive tables, it’s worth remembering that, due to the large amounts of water, land, and feed required to produce it, the joint of animal product we serve is likely to account for most of the environmental impacts of the entire meal. It is a personal choice to decide if you want to be plant based or not. The key is to aim for a #sustainable
celebratory table - to be mindful of the amount of natural resources we are consuming in to create a feast. It’s not that celebratory when most food is ending up in landfill.
I hope you have enjoyed your mooncakes. Thank you all for joining me on this project. Thank you for all your support. Thank you my all time sous chef @esychu
