-1 cup packed basil
-1 cup packed spinach
-1 medium-large zucchini, chopped
-1/2 cup dry roasted and salted pistachios
-1/4 cup nutritional yeast
-2 tablespoons lemon juice
-2 cloves garlic
-sea salt and pepper, to taste
-4 medium-large zucchinis
-20 cherry tomatos, halved
1️⃣ In a food processor, add the basil and everything through salt and pepper and process until smooth, or smooth with a little texture
2️⃣ Spiralize or vegetable peel the 4 zucchinis into "zoodles"
3️⃣ Toss pesto with the noodles and top each with a handful of tomatoes to have a chilled meal
4️⃣ To serve warm, add pesto to a medium pan and heat over low. Add the zucchini noodles and tomatoes and coat well, warming for just a minute or two, before the zucchinis release water.
