Squid Salad with Herbed Breadcrumbs 🦑🌿🍋🌶 I got this recipe from @foodandwine
and it was delicious. Light and refreshing and also savory and satisfying ✨ INGREDIENTS: baby potatoes, mixed greens, 1 yellow bell pepper, 3 green onions, 2 slices hearty country white bread, 1/3 cup mixed herbs (I used parsley and oregano), olive oil, zest of 1 lemon, juice of 1 lemon, squid ✨ INSTRUCTIONS: Preheat oven to 300. Boil baby potatoes in a pot of water for at least 15 minutes, or until potatoes are easily smushable (an official culinary term 😂). Slice the bell pepper and green onions as thin as you can. Add them to a large bowl with the mixed greens. Pour the lemon juice over the greens and pour about 2 tablespoons of olive oil and salt to taste on top and mix, evenly coating the veggies. put the mixed herbs and bread into a food processor and pulse, turning the bread into breadcrumbs. Mix lemon zest, salt to taste and 2 tablespoons of olive oil with the breadcrumbs. Spread onto a baking sheet and bake for 10 minutes or until breadcrumbs and slightly brown. Heat 1 tablespoon butter and 1 tablespoon olive oil in medium high heat. Once butter is melted, add squid to skillet. Cook until squid is just starting to brown. Add 1 tablespoon garlic. Cook for an additional 2 minutes. Mix baby potatoes and squid with your greens. Top with breadcrumbs. ENJOY!
