Ground Turkey and Sweet Potato with Butternut Squash Sauce: Okay so last night I had a weird craving for ground turkey and sweet potato, so I just decided to combine them both in a skillet.

, and while I was there, realized I needed a green veggie and a sauce or it would be too dry. So, I grabbed green beans (I had already had brussels and broccoli for lunch) and some butternut squash caught my eye. I love butternut squash soup, so why can’t it make a sauce?
To make this dish, I started with the sauce. I roasted the squash in garlic, sage, and a touch of oil in the oven and cooked that at 400 for about 40 mins (make sure squash is soft). Then I heated the skillet on medium-high heat, cooked the turkey, set it aside. After that, came chopped onions, the green beans, and the sweet potatoes (put a lid on the skillet for about 5-7 mins until sweet potato is cooked). While that’s cooking, mix the squash with almond milk in a food processor until creamy. Finally, put the turkey and sauce back in the skillet and mix well.
This dinner was wayyy better than I expected, especially because of how random it was. It was very sweet and had lots of flavor (especially if you add some salt and pepper), and of course, really healthy. If you have questions about ingredient specifics, I’d love to answer them if you DM me.
