Officially Autumn, AKA pumpkin + apple + cinnamon season. Have you made any fall treats yet?! I surprisingly haven’t - but the cans of organic pumpkin purée sitting on my counter have been staring at me so I think it’s about time to crack them open. Genovese Artichokes 🔪🖤
I grew up in California, and artichokes grew wild around us. My love of them has never faltered, but I do more than just steam them and dip the leaves in butter now.
I steamed these in Chardonnay, and sautéed some chopped cremini mushrooms, shallots, garlic, and onions in olive oil. Put the mixture in a bowl to cool, and crisped up some prosciutto in the same cast iron skillet.
I added chopped Italian parsley and Parmesan to the mushroom mixture along with the crispy prosciutto. Pulled out some of the center leaves and I’m going to stuff them with the filling.

Yesterday we spent the day touring the Northern peninsula of Croatia. Rovinj is known for producing the best olive oil. In fact, last year they won best olive oil in the nation! Currently searching for bubble wrap so I can bring home all of the olive oil! 😬
