It's hardly ever just about the physical weight. Typically it's the mental, emotional, spiritual and dead weight and emotions that makes the load unbearable. On the left I was trying to be everything everyone else wanted me to be. I was in the studio recording an album and I was in an amazing financial space mingling with people that most are only blessed to see on TV. I should've been happy.. But I wasn't. .
Now on the right.. Yes!! I'm so in love with her. A total of 66 lbs lighter. I've found my peace and my joy. No record deals, no celebrity acquaintances, no traveling the world.. Instead, healing, helping and guiding others as I guide myself. Feeding minds, bodies and souls. Changing lives one at a time. There's nothing like hearing "Because of you I'm still here" That's success on a major level!!
Flautas ahogadas rojas 🌯🌮 (fácil):
1. Primero pon a hervir 1 kg de papas hasta que al picarlas con un tenedor este muy suavecito.
2. Ya que estén listas tienes que machacarlas y agrega 1 cucharada de levadura nutricional, 1 cucharadita de ajo y cebolla en polvo, y pimienta al gusto.
3. Pat a hacer la flauta necesitas tortillas calientitas, si ya tienes en tu refrigerador nada más caliéntalas un poco en el comal y comienza a hacer los taquitos.
4. Para la salsa solo use 5 jitomates, un trozo de cebolla, un ajo, dos chiles gustillo y unas sobras que tenia de chile seco de árbol (aprox 4). Los puse hervir en agua, los licué y los volví a poner a hervir con un poco de caldo de vegetales en polvo y agua.
5. Pica cebolla, cilantro y queso, y adorna las flautas como más te guste.
6. Disfrútalas porque quedaron deliciosas, mañana posteo las flautas verdes. 🙊

My vegan week challenge has officially ended. I wanted to share more about it with you but it was a pretty busy week. Im Proud to say that we stuck to the plan the entire week and it felt great. The hardest part of it was to balance our macros and eat enough protein, but we manage to include a high variety of ingredients that made our food delicious and nutritious. I will share the recipes we’ve created with you during the week.

Vegan Kale and Mushroom Pasta
Ingredients: 2 cups of shopped kale 1 cup of mushrooms 2 cloves of fresh minced garlic 1/4 cup of fresh cilantro or parsley 1 small onion chopped 1/2 box of pasta
Process: Boil pasta according to package instructions or your liking along with the kale in a pan add a little bit of olive oil and sauté mushrooms when soft add onions, garlic and cilantro, cook for about 2 minutes and set aside. Add 2 tablespoons of vegan butter, and 1 teaspoon of flour and make a rue. Add some unsweetened original almond or soy milk about a half cup let it simmer for 5 minutes add to mushrooms mix and pasta. Add seasoning to taste. A big fat salad is exactly what my body was craving for dinner this week. So here’s what I threw together ➡️ spinach, quinoa, carrots, bell peppers, walnuts, cranberries, and roasted sweet potato. 🌶🥕🍠🥗 Then I topped it with the best dressing ever (S/O Costco). Oh and we had some leftover oyster crackers from when J was sick, so I threw those on top as well... could also add on flaxseed and/or chia seeds!. DELICIOUS AND NUTRITIOUS!

Quinoa is a healthy substitute for rice, even brown rice. The reason? It’s higher in protein and a complete protein source, meaning it contains all the amino acids your body needs and must get from dietary sources. Few plant proteins, other than amaranth and soy, meet these criteria. It’s also a better source of fiber, magnesium, and folate relative to brown rice. I prep quinoa in the pressure cooker and use it in salads ad as a side dish. As you can see in the photo, it’s a good way to boost the protein content of a salad. Add it to soups, stews, and make plant-based quinoa burgers while you’re at it.

Acai & Mango Smoothie Bowl!
Ingredients ~ 1 mango sliced into chunks
~ 1 sachet of frozen Acai
~ 2 tbsp @tropeaka Acai powder ~ 1 frozen banana
~ 1/4 cup coconut water
Place all ingredients into a blender and blend until smooth. Pour into a bowl or glass. Top with your favourite toppings!
I choose banana, chia seeds, flaxseeds, frozen blueberries and pistachios.

I've really been into making this vegan enchilada casserole for my family. Mainly because we bought a bag of corn tortillas from Costco and for a family of 2 1/2...well, it's lasting quite a long time. I use a mixture of refried pinto beans and stir fried baby bellos for the filling. Delicious! 👌.
