Just harvested some thyme, spearmint, oregano, and parsley. Growing your own is so rewarding, even if it may seem “time consuming.” Can’t wait to create some chocolate mint shakes, garlic bread (w/parsley), oregano for drying to turn into spices, and thyme for toasts & stroganoff. I need to start seeding to hopefully replant by next weekend for the spring. There are so many perks to being a green thumb.
• Have yourself a very vegan Christmas no. 2! This is maybe one of my favourite vegan recipes I’ve created! It’s great for summer too because you get the coconut cream really cold so it firms up, and then you top it with strawberries and mango! Perfect for a hot summer’s day! The recipe is quite long so I’ll just post the ingredients below with a very abridged version of the method, and you can follow the link in my bio to the proper long method, which is on my blog ☺️💕: Ingredients:
For the peanut pastry shell
1 1/3 cups of whole meal plain flour
3 Tbsp coconut butter
3 Tbsp smooth peanut butter
1/3 cup icing sugar
3 Tbsp cold water
For the coco-whip filling
2 x 400g cans coconut cream
1 x 400g can coconut milk
4 Tbsp icing sugar
1 tsp vanilla essence
For the toppings
2 large, ripe mangoes, cut into cubes
1 ½ cups of fresh strawberries
½ cup coconut shards
Combine all pastry ingredients in a food processor then knead to a smooth dough. Refrigerate for 20 mins, then roll out and put in a pastry tin. Bake at 180C for 15-20 mins or until lightly browned.
Get the coconut cream really cold in the fridge overnight, then skim off the top creamy bit that separates out. Whip this with cold electric beaters and add the remaining coco whip ingredients.
Put the cocowhip inside the cooked pie shell, place in the fridge to set for 30 mins, then top with the fruit toppings and eat! •

BUT I did take a pic of my dessert! Also I had this amazing DJ Kale’ed smoothie that LITERALLY CURED ME! I was starting to get sick this morning, but after drinking the smoothie immediately I was feeling so much better!! Giving good food to your body pays off!!

When we chew "nitrates" from greens the bacteria in our mouth mixes with the food to reduce the nitrates to nitrites. The gastric acid in our stomach further reduces them to produce nitric oxide. Nitric oxide is a very, very good thing. It’s most critical function is vasodilation - where your blood vessels widen to allow for increased circulation and effective blood/oxygen/nutrient flow. Very important for CVD and diabetes prevention as well as sexual function💫 I know what you might be thinking, why would I choose to use a green smoothie pic for this? Some people believe that smoothies bypass this important system. When in fact, there is a “entero-salivary” recirculation that allows the nitrates in the smoothie that enter the bloodstream, to be turned into nitrites and thus nitric oxide via the saliva, within an hour of drinking your juice/smoothie. So keep enjoying your green drinks, but also remember to chew some greens too 😁🥦🥬🥒
