Happy Sunday! Productive day in the kitchen and a delicious dinner on the table! Made this spiralized beef taco casserole and Michael and I ate it up! I used @cecesveggieco sweet potato noodles (ad) instead of your typical spaghetti squash and we loved it! Bonus is we have some extra for Michael's lunch for the week - it makes an easy meal prep recipe! Here is how I did it:⠀ -⠀ 1# beef⠀ 1/2 yellow onion, diced⠀ 2 large bell peppers, diced⠀ 3 cups packed kale, roughly chopped⠀ 2 cups cherry tomatoes, halved or quartered⠀ 1 1/2 tablespoons taco seasoning⠀ 1 container @cecesveggieco sweet potato noodles⠀ 1 1/4 cup salsa⠀ 1/2 cup mayo⠀ s&p⠀ toppings: avocado, cilantro, salsa...⠀ -⠀ In a large sauté pan, add beef and cook 3-4 minutes untiled slightly browned. Add onion and 1/2 tablespoon taco seasoning and sauté 2 more minutes. Add peppers, kale, 1 tablespoon taco seasoning, and s&p and sauté 2-3 more minutes. Turn off heat and mix in sweet potato noodles. Transfer to a large greased baking dish, leaving behind the grease. In a small bowl mix together 1 cup salsa and mayo. Pour over sweet potato mixture, evenly distributing. Use a fork to make sure it is all throughout the casserole. Top with some more salsa if desired. Bake at 375 degrees for 35 minutes until crispy on top. Let rest for 5 minutes to firm up. Top with your favorite toppings! ⠀ Note: depending on the salsa used, it might be a little runny. If so, eat it out of a bowl!⠀ #eatthegains

Mint chocolate cookie truffles 🙀 I picked up a couple boxes of @goodiegirlcookies mint chocolate cookies last night from @krogerco and was immediately obsessed 😍 One of my favorite things to do with cookies is make truffles for the holidays, so I tested out this recipe and now i'm hooked 💯 Also pls dont mind the chocolate on my fingers it was melty while trying to take this picture!! • • • Mint chocolate cookie truffles: 1 box of @goodiegirlcookies mint chocolate cookies crushed mixed with 3/4 package of low fat cream cheese, refrigerate for a hour, and then dip in dark chocolate and top w decorating sugar! VEGAN FIG SQUARES 😍 by @emmoreton via @veganbombs #veganbombs . . . ✨ I have been meaning to make these literally for years! Fig rolls are my favourite biscuit EVER and remind me of my dad and being a kid! I keep seeing them crop up on insta and I’ve been dying to make them. ✨ I used spelt flour because I’ve got quite a thing for it at the moment but I would imagine you could just sub for another flour if you would prefer. Side note @aldiuk have been selling spelt flour for quite a while now if you did want to try it. It’s wholegrain and can be easier to digest than wheat 🌾. This recipe makes around 20, I’ve already eaten most of them 🤭 Fig filling: Juice of 1/2 a Lemon Juice of 1 Orange A splash of milk of choice 250g dried figs 5 dried dates 1tsp mixed spice Biscuit layers: 320g of spelt flour 10tbsp of melted coconut oil 6tbsp milk of choice 3tsp of coconut sugar (or alternative) A pinch of salt 1 tsp vanilla extract 1/2 tsp baking powder 1tsp apple cider vinegar In a mixing bowl, whisk the flour, baking powder and salt. Then add in the rest of the biscuit ingredients. Mix with the spoon until mixture starts to form a dough. Press with your hands to form a smooth dough. Try not to knead it too much as it will crumble. Place in a sealed container or wrap in cling film and refrigerate for 30 minutes or freeze for 10 minutes. Meanwhile, make the fig filling. Place all ingredients into a blender and blend until smooth. Take the dough out of the fridge. Push 1/2 of the dough down into a rectangular baking tray. Spoon the fig filling on top and smooth out, spoon the remaining dough on top and press down to ensure it’s all evenly distributed. The less gaps, the less crumbly. Bake in the oven at 170C for around 20/ 25 mins. Hey guys, this was such a crazy day so far! 😱 In the morning I was going to make pizza but then I had to rush to an unexpected appointment, made some grocery shopping afterwards and on the parking lot I saw a little bird lying on the ground, more dead than alive (check my Insta stories) 😢😭 . My boyfriend and I took him to the vet to check if he is ok and he said the bird was starving since days and needs to be kept warm. But his wings are fine, nothing is broken. So we took him home, put him into a box with a lamp (to keep him warm). ☺ . He finally ate some food and drank water and is looking much better. 😍 Right now he is resting on my lap since hours and I can't move. When I try to keep him alone he starts screaming like crazy and only stops when I return (therefore I can't create something new in the kitchen today). 😅 . I used treeline herb garlic cheese, rolled it in a ball and covered it with a mixture of crushed candied pecans, fresh diced chives and rosemary. 🙌🏼😍 (saran wrap + refrigerate overnight) Grapes, fig jam, rosemary crackers, green olives, dried figs, sliced pear, and sourdough baguette 🥖 Yum!

It wouldn’t be a successful meal prep day if I didn’t make a batch of tostones to freeze for later use. I get asked all the time how I freeze the tostones and re-fry it when I’m ready to use it. So here’s how: — 1. You’re going to fry the plantains, smash it, and then let it cool to room temperature. Do not re-fry the flatten plantains unless you’re going to eat them right away! 2. Afterwards, freeze the tostones in a single layer. Once frozen transfer to a ziplock or container of your choice. 3. When you’re ready to eat the tostones, just re-fry them in preheated oil straight from the freezer OR recently I discovered you can toast them in your toaster. Just let it thaw a bit if you go that route. It also might take a couple rounds in the toaster for it to crisp up, but it works. — What’s everyone meal prepping today?! Raclette: Migros vs. Vegusto, who makes it better? As most of you know, we Swiss love our cheeses. And as a vegan I‘m not any different. Except that I love my cheese to be made with plants 🌱 Luckily there are these two delicious options for Raclette! 🧀 And honestly, they‘re both delicious. A combination of them would make the perfect raclette: The Migros one gets a nice crust but doesn‘t melt enough and the consistency is a bit too chewy. The Vegusto one melts but it misses the crust and gets slightly too liquidy. Taste wise is the Vegusto one stronger, which I prefer but if you like a lighter flavor the Migros one is better for you. Directions: Mix together tahini, protein powder, maple syrup and almond flour. Note** if your tahini/nut butter is thikkk, use less almond flour. You want a dough like consistency. Fold in chocolate chips. Scoop onto small balls (makes about 20). Place in freezer to harden. Melt chocolate with coconut oil. Dip cookie dough balls into chocolate and sprinkle with flaked salt. Place back in freezer to harden. EAT UP 🙌🏻
My hack to a super quick pasta sauce? Leftover cream soup. 🙈 I’ve used this trick many times and it’s one of my favorite ways how to turn the leftover soup into something new and delicious. 💯 I had some leftover beet-potato cream soup in my freezer. I heated it up, added extra salt, pepper and rosemary (sauce has to be a bit more spicy and herby than the soup). Then I cooked some spaghetti, added the sauce & some avocado and dinner is served! 🙃 🇱🇻~ Kā ātri pagatavot makaronu mērci? Izmantojot pāri palikušo biezzupu. 🙈 Šo paņēmienu esmu izmantojusi vairākas reizes un, pateicoties tam, ir radušās arī jaunas receptes. 💯 Saldētavā atradu kastīti ar biešu-kartupeļu biezzupu. Had one of the best plant-based massaman curries ever last night in Charleston. It’s served in this completely unnoticeable place close to the beach, nothing fancy, but incredible food. It’s called Jack of Cups if anybody ever makes it to Charleston, South Carolina. I’ll definitely try recreating it when I’m back home. 💛 Dieses Massaman Curry war unfassbar lecker. Das Restaurant ist so unscheinbar, dass man auf jeden Fall dran vorbei laufen würde, wenn man es nicht auf dem Schirm hat. Diese kleinen Geheimtipps liebe ich auf Reisen. Deswegen macht es so Spaß, mit den Locals in Kontakt zu kommen, zu fragen und zuzuhören. Das macht für mich Reisen aus. Zu Hause versuche ich mich also direkt an dieses Thailändische Curry. I’ve been eating meals like this a lot recently - most of the time not as meticulously arranged, but following a similar principle of throwing stuff together and serving with an easy dressing. Even though I don’t have a lot of time to spend in the kitchen, I still make my food as and nutritious as possible because I’ve never been a big fan of going out to eat. Another thing that really helps is prepping all the ingredients in advance: for example, cooking the beans, chopping the vegetables and roasting/boiling potatoes. Baby pumpkin pies 🎃 . . Recipe below ↴ No bake, gluten, dairy and refined sugar free, these little babes are sure to get you in the mood for Autumn!🍂Cacao buckwheat crust topped with a creamy pumpkin filling, drizzled with chocolate and topped with fresh coco whip 🥥 and pecans! Happy Sunday xoxoxo . . Baby pumpkin pies (makes 8/9) . Crust . 1 cup buckwheat 1.5 cups pecans 2 tbsp cacao 1.5 cups dates 1 tbsp coconut oil 4 tbsp water . Filling . 1 can coconut milk 1 cup pumpkin puree 1.5 tbsp pumpkin spice 2 tbsp maple syrup 1 tbsp coconut oil . Topping . 1 can coconut milk (cream only) 1/4 cup dark chocolate, melted 3 tbsp chopped pecans . Add crust ingredients to a blender and process until a dough is formed. Press into lined or silicone muffin tin and set aside. Make filling by blending all filling ingredients together until smooth. Pour on top of crust and set aside in the freezer for at least 4 hours, or overnight. Whip coconut cream with a fork and set aside in the fridge to thicken for 10 mins. Pop pies out of muffin tin/mold and drizzle with melted chocolate. Spoon coco whip into piping bag fitted with a large star tip nozzle. Swirl cream onto each cupcake and garnish with pecans. Blanche, noire, rouge, violette ou bicolore, elle reste avant tout un fruit gourmand et gorgé de soleil. Oscillant entre saveurs douces et acidulées, sa chair est onctueuse et rafraîchissante. Grâce à sa modeste teneur en sucre et à la qualité de ses apports nutritionnels, la figue participe à un régime alimentaire diversifié. Contrairement à certaines idées reçues, la figue fraîche fait partie des fruits moyennement sucrés, au même titre que la pomme. Adaptée à une alimentation minceur, la figue est un fruit équilibré. Un dimanche qui commence comme je les aime, il ne me manquait plus qu'un super petit déjeuner pour commencer ce dimanche parfaitement 🤗 . . .🥞 Et pour cela, je n'aurais pas pu mieux faire que ces pancakes #vegan #glutenfree et hyper fluffy, les plus fluffy même que je n'ai jamais fait en version végétale 😍 Un pur bonheur, des pancakes à la poire et coco, farine de maïs et sarrasin @celnatofficiel , avec encore plus de kiff en topping avec des figues, yaourt à l'amande @lespetitespousses mélangé à purée d'amandes complètes @nu3_fr , des amandes et du souchet 💚 . . .🤗 Si tu le souhaites et que ces pancakes ont un max de j'aime, alors promis je partagerais avec vous la recette 🙏

Pumpkin Carrot Scones. . . 1 1/2 cups white flour 3/4 cup of whole wheat flour @bobsredmill 1/4 cup brown sugar 3/4 tsp pumpkin pie spice 1/4 tsp baking soda 1/3 cup cold butter 1 egg 1 cup pumpkin purée @farmersmarketfoods 1 cup grated carrot 1/3 cup of oat milk @earthsowncanada 1/2 tsp of apple cider vinegar @bragglivefoodproducts 1 tbsp honey 1 tbsp melted butter. . . . Preheat oven to 400. Mix together all the dry ingredients (first five), then cut in the cold butter until they are dispersed into pea sized chunks. In a measuring cup place milk and apple cider vinegar and let it sit for 5 minutes. In the meantime mix together eggs, pumpkin, carrots, and then the milk once ready. Combine dry and wet ingredients, roll lightly with extra flour into a circle about 1” thick. Cut into 8 slices. Mix together the honey and melted butter to brush on top. Then bake for 20 minutes or until lightly browned. Enjoy warm with extra honey if you please! . . . Can’t get enough of these fall ingredients! If only summer came back right when they went out of style ....

Baby pumpkin pies 🎃 Via @bos.kitchen Via @veganbombs #veganbombs Recipe below ↴ No bake, gluten, dairy and refined sugar free, these little babes are sure to get you in the mood for Autumn!🍂Cacao buckwheat crust topped with a creamy pumpkin filling, drizzled with chocolate and topped with fresh coco whip 🥥 and pecans! Happy Sunday xoxoxo . . Baby pumpkin pies (makes 8/9) . Crust . 1 cup buckwheat 1.5 cups pecans 2 tbsp cacao 1.5 cups dates 1 tbsp coconut oil 4 tbsp water . Filling . 1 can coconut milk 1 cup pumpkin puree 1.5 tbsp pumpkin spice 2 tbsp maple syrup 1 tbsp coconut oil . Topping . 1 can coconut milk (cream only) 1/4 cup dark chocolate, melted 3 tbsp chopped pecans . Add crust ingredients to a blender and process until a dough is formed. Press into lined or silicone muffin tin and set aside. Make filling by blending all filling ingredients together until smooth. Pour on top of crust and set aside in the freezer for at least 4 hours, or overnight. Whip coconut cream with a fork and set aside in the fridge to thicken for 10 mins. Pop pies out of muffin tin/mold and drizzle with melted chocolate. Spoon coco whip into piping bag fitted with a large star tip nozzle. Swirl cream onto each cupcake and garnish with pecans. buzzword: G U T. H E A L T H ! . You hear about it all the time now so you might be wondering: “is my gut health up to snuff?... should I be asking my doctor for a gut checkup? How on earth can I even tell if my gut is healthy?” . I’m going to be you and your guts’ new best friend because I’m here to answer those million dollar questions! Lucky you, I’ll do it for free! . One component of a healthy gut is the diversity of micro flora (ie: bacteria and yeast strains) present in your gut. The current consensus is that a wider diversity = better gut health. . And a recent study revealed a VERY easy way of identifying people who have a wider diversity..... . Those with a wider diversity were the people who ate a wider diversity of plant foods! . THAT’S IT! . It didn’t matter whether someone ate an entirely vegan or an omnivorous diet, what mattered was the number of different plant foods eaten over the course of a week! Those who ate more types of plants had healthier guts! . Lucky for us the researchers left us with a specific minimum number of plant foods to aim to eat in a week. And that number is 30! . Now here’s my challenge to you: do you eat 30+ plant foods in a week? . Let’s call this the New Whole 30 he he :) . Take the next week to write down all the plant foods you consume in a week. . That includes: 🍒 fruits 🥦 veggies 🥖 grains 🥜 legumes, ie: beans, lentils, chickpeas, tofu 🌰 nuts and seeds 🌿 herbs and spices ☕️ coffee, tea, herbal beverages . Chocolate Coconut smoothie w/ choc sauce, hempseeds, coconut flakes, dried flowers & fruits ’n’ berries on top ✨✨✨ My breakfast + lunch combined from yesterday ✌🏻😋 Smoothie recipe for 1: 1dl soaked cashews, 1dl @voimaruoka wholefood 360 coconut (flavor), protein, nut & seed mix, 1 tbsp raw cacao powder, ~4dl plantbased milk, 1dl oats, maple syrup to taste, pinch of sea salt flakes / optional. Blend and let the oats soak for a little while. For the chocolate sauce I just melted dark chocolate and mixed it with about 1tsp of coconut oil. Happy Saturday my dear Instagram friends!
