Deets 👉 Baked sweet potato + roasted carrots🥕 + sauteed cauli rice with veggies + fresh romaine + and avo🥑😋
Amééé este ⭐️Salteado de Pak Choy y Arroz Yamani Biodinámico ⭐️!!!
La preparación es facilísima:
👉🏼Cociná el arroz teniendo mucho cuidado de que no se pase (un poquitito antes de cocido está perfecto, porque después se termina de cocinar con el calor del wok/sartén). Reservalo. Si este paso lo podés hacer el día anterior y tenerlo frío de heladera para el armado, es ideal!
👉🏼Cortá una cebolla y un par de tallos de puerro en finas láminas y reservalos. 👉🏼Separá el tallo de las hojas del pak choy (si querés el tallo cortalo en 2).
👉🏼Precalentá una sartén ó wok a alta temperatura. Cuando haya llegado a la temperatura deseada agregale un chorro de aceite neutro. Salteá la cebolla y el puerro mínimamente. Agregá los tallos de pak choy y salteá brevemente hasta que notes que está cocido y crocante -al mismo punto que la cebolla y el puerro-. Este paso lleva segundos!
👉🏼Agregá el arroz cocido (si querés sacalo un rato antes de la heladera para que no esté taaaan frío), integrá todos los ingredientes y apagá el fuego. 👉🏼Agregá las hojas de pak choy y revolvé suavemente. Esto es para que se cocinen con el calor de la preparación sin perder su estructura!
👉🏼Al momento de servirlo rocialo con un chorrito de aceite de sésamo o maní para darle un brillo especial y un sabor único. Si querés agregale unas láminas de cebolla cruda para intensificar el sabor y dar color. Ah! y las semillas de sésamo le quedan increíbles! .

Phew back home and back in action! I’m not going to lie - while I was in Mexico I def didn’t stay on track with my nutrition 🙈. .
In the past I would have totally beat myself up for days over this. Seriously - I remember feeling guilty and down about having a couple cheats and not sticking to clean nutrition 100% of the time.
Now, thanks to some good ol’ personal development I have learned that I am human and to give myself grace and that beating myself up over something I can’t change does absolutely nothing.
Thank goodness I was able to jump right into an accountability group when I got home and get right back into the swing of things! .

Firecracker Tofu: Cut 1 package of tofu into 1-inch cubes and rest on a paper towel to absorb excess water. Add the tofu to a bowl and sprinkle with 1 tsp garlic powder, 1 tbsp nutritional yeast, and 1 tsp cornstarch. Season with salt and pepper. (No tossing needed)Add the tofu to your ActiFry and drizzle with 1 tbsp of oil. Set the timer for 40 min and GO! 🍃
Cashew-Chili Sauce: In a medium bowl, whisk 1/4 cup cashew butter, 2 tbsp tamari, 2 tbsp rice vinegar, 1 tbsp sesame oil, 1 tbsp chili sauce, and 1 clove garlic (minced) Add 1-2 tbsp of water to thin, as necessary. To serve: Tear 6 romaine lettuce leaves and top with cooked rice noodles, shredded beets, carrots, sliced green onions, fresh mint, and crushed peanuts. Top with the crisp firecracker tofu and drizzle the cashew-chili sauce. Serves 2.

I could go on and on about how much I love chopped salads, but I'll keep it short. They are a great option to feed a crowd because they are easy to customize. If you have a mix of vegans, vegetarians and meat eaters, just leave the cheese and protein on the side and people can add them if they want. Combining 2 of my favorite things...pasta + peanut butter for these One Pot Peanut Butter Noodles. I love almond butter and tahini, but chunky peanut butter holds a special place in my heart 💕It’s good in EVERYTHING and makes this one pot veggie-packed pasta taste so creamy and comforting, which is just what I want on this rainy Wednesday. 🥜 .
✖️RECIPE FOR ONE POT PEANUT NOODLES, serves 6 ✖️
5 cups water
1 T agave nectar
3 T soy sauce
2 inch piece of fresh ginger sliced thinly
1 stalk lemongrass sliced thinly (optional)
4 T natural peanut butter
12 oz/454 g of whole grain or gluten free spaghetti
1 small head broccoli cut into bite sized pieces
1 cup chopped red cabbage
2 carrots cut into matchsticks
1 yellow summer squash spiralized
1 green summer squash spiralized
1 lime sliced
4 scallions chopped
Layer all ingredients in the order listed in a large pot and bring to a boil. Bring pot to a boil. Reduce heat to a low simmer and cover. Remove lid and stir with tongs regularly for 10 minutes until pasta is cooked al dente and a sauce forms.
Serve with chopped fresh cilantro, red pepper flakes, and extra lime wedges. A small splash of rice vinegar is nice to finish it. 💛 .
