When I tell people for the first time that I‘m vegan and glutenfree, the most common question is: „What do you even eat?“ It might sound restrictive at first but honestly, I can eat everything just the vegan & gf version of it 🤗🙃 And once you‘ve found your recipes it‘s so easy! And healthy 😏 Because when you make your own food you know EXACTLY what‘s in it. No additives, no sugars or other weird things. And so I don‘t restrict anything. If I feel like having cheese nachos and chocolate cake for dinner, I do. Eating intuitively has always been my number one „diet“. That‘s also why I think it‘s „healthy“ to eat vegan chocolate or ice cream once in a while. I‘ll make a blogpost about this one day and talk about it in more depth. In this picture a flashback to my: Tropical Nicecream: 1 frozen banana 1/2 cup of coconut cream (refrigerate overnight and use the hard part) 1 cup of frozen strawberries and dragonfruit A splash of lemon Unsweetened plant milk as needed Mix bananas and coconut cream, blend until smooth. Add the rest of the ingredients and blend until well combined. Serve with your favorite toppings. 🌱Plantain party bowl🌱Saucy spiced black beans, deconstructed salsa, roasted plantains. 💚Happy Monday friends.💚 This is an easy meal to put together and there’s something to please everyone...I think. My youngest says, ‘you can’t go wrong with rice and beans.’ 🌱Recipe black beans: Sauté 1 small chopped onion in 1 tbsp extra virgin olive oil a few minutes until translucent. Add 1 minced garlic clove and sauté another minute. Add 1-15 oz can (mostly drained) black beans, 1/2c low-sodium veggie broth, 2 tbsp tomato paste, 1/2 tsp ground cumin, 1/4 tsp chili powder, 3/4 tsp smoked paprika, salt to taste. Simmer about 20 minutes. (Adjust seasonings to taste and add more broth if gets too dry.) KID GRANOLA! 👧🏼❤️🍓So FUN! We put in all things YUM & FUN! ✨Hope absolutely LOVES 💕it! 🌈 Honestly this has to be the easiest recipe to make ever! 🙌🏻 Hope helped, of course, and she could hardly wait to eat it!!! Luckily it doesn't take long! 😋 Here's the DeAts👇🏼 In small baking dish combine 1/4 cup oatmeal @bobsredmill , 1/2 cup morning oh's @wholefoods , handful of unsalted peanuts 🥜, handful of unsweetened coconut chips @traderjoes , handful each of freeze dried strawberries 🍓, freeze dried raspberries, freeze dried pomegranate, & freeze dried blueberries -(all @natierrasuperfoods ) squeeze honey 🍯 thoroughly over mix, then mix with a spoon to make sure everything is covered. Add more honey if needed. Mix again. Place in oven on 300 for about 12-15 min. Mixing once halfway through. Take out and let cool. Serve & enjoy. Store in airtight container. Elle est le plus sucré des fruits rouges, et aussi le plus énergétique, elle est plutôt bien pourvue en minéraux.  Juteuse et rafraîchissante, elle est raisonnablement calorique tout en étant intéressante d’un point de vue vitaminique. La cerise renferme des quantités non négligeables de calcium , de fer et de cuivre. Son taux de magnésium est modéré, de même que sa teneur en soufre et en chlore. Elle apporte un très grand nombre d’oligo-éléments (zinc, manganèse, nickel, fluor, iode, cobalt, sélénium, etc.). L’éventail vitaminique de la cerise est très large. Made some roasted buffalo cauliflower today for my meal prep clients and it reminded me of this maple tahini roasted cauliflower! Makes for a super easy side dish for dinner or meal prep, and I'm always game for anything with tahini on it! All you need is cauliflower, tahini (I used my fav @soomfoods - use 'eatthegains' to save 10% on their website), sesame oil, maple syrup, lemon juice, and red pepper flakes. Toss it up and roast it in the oven until crispy! Hope everyone had a good weekend! We bought some nw furniture for the house, saw Incredibles 2, and went to the pool. It was a lesson in patience to make these ice cream sandwiches. My 4-year-old and I had the chocolate chip shortbread dough ready before 8:00am, but then we had to wait for it to chill in the fridge. Then there was the rolling, the baking and more waiting for the cookies to cool before we could scoop the vanilla ice cream and sandwich them together. Then they needed time to freeze, but it was worth the work and wait. My son was in complete awe of our baking project. #whplookup

I still crave muffins and baked sweets in the middle of summer, anyone else?? 😬 I was so excited to make these vegan, gluten-free carrot cupcakes yesterday because I have been craving carrot cake something FIERCE and found a great recipe from @lovingitvegan 🌱 🥕🍰 I wondered if I would miss regular cream cheese, because cream cheese frosting fits like a dang glove with carrot cake - but the cashew cream cheese complimented these so well. I experimented with large cupcake tins and mini cupcake tins, and I actually preferred the minis because these were very rich. Of course, then I proceeded to eat like 5 minis 😳😅🤷🏻‍♀️ And that was after several dips of raw batter which was HEAVENLY 🙌🏼 I’ve found that vegan baking is not complicated, just as delicious, and you can always eat raw batter without fear of death, so 10/10 would recommend 👍🏼
