This plate is what my dreams are made of 🌈 Red bell peppers for vitamin C, sweet potatoes for vitamin A, zucchini for potassium and more vitamin C (can’t have enough during flu season!), fresh tomatoes straight from the garden for antioxidants, a chickpea flatbread for protein, drizzle of olive oil for healthy fats. Dirty Chai ☕️ •1 cup boiled water •1 chai tea bag •1/2 cup hot black coffee •1/2 cup homemade vanilla almond milk •Sweetener of choice Place chai tea bag in cup and pour boiled water over it. Let steep for a few minutes. Remove tea bag, add coffee, sweetener, and stir. Add in milk and sprinkle with cinnamon✨

Wishing I had these peanut butter cookies with raspberry jam right this second 🤤 . Raspberry Chia Seed Jam •1 cup frozen raspberries •1 tablespoon chia seeds •1-2 tablespoons coconut oil or water •Honey or maple syrup Place everything in pot over medium heat. Stir frequently, the raspberries will break down and the jam will thicken. Taste and add sweetener to your liking. Once you store in fridge it will thicken even more. Tastes best with cookies, pancakes, or toast ✨

roasted japanese sweet potatoes + broiled red peppers w/ kale + purple cabbage 👀 peeled & chopped a japanese sweet potato sprayed w/ @traderjoes coconut oil spray and roasted at 325 ~45 minutes 💖💖 the time & temp that you roast your taters at is gonna vary from oven to oven! i use a mini convection oven to make all my meals (so my cook times will be a bit different than a traditional oven) because my dorm came with only a hot plate & microwave 🤨 but i love my mini oven so all is well- have a great friday friends!

Vegetable noodles: a great way to add another veggie to your plate👌🏽 Butternut squash noodles + olive oil + salt + pepper + hemp seeds + parsley✨
This is the best banana bread I have ever had and it has no added sugar 🍞😍 •2 large or 3 medium very ripe bananas (the more ripe, the sweeter!) •1/4 cup coconut oil, melted •1/4 cup nut butter •1 tsp vanilla extract •2 chia seed “eggs” (2 tbsp chia seeds + 5 tbsp water, stir and let sit for 5 min.) •1/4 cup coconut flour •1/4 cup almond flour •1/2 tsp baking powder •1/4 tsp baking soda •1/2 tsp cinnamon •Dash sea salt •Optional add-ins: walnuts, chocolate chips, raisins Preheat oven to 350F. Combine dry ingredients and wet ingredients in separate bowls. Add dry mixture to wet and mix thoroughly. Line loaf tin with parchment paper or grease with coconut oil. Add batter to tin, place in oven, bake for about 30 minutes. A knife should come out clean after inserting into bread. Allow to cool before slicing ✨

Rolling into the week with homemade cashew mylk 💃🏽🥛 •1 cup raw cashews •3 cups water •1/4 tsp sea salt Soak cashews overnight (for at least 12 hours). Drain and rinse. Add cashews to blender with filtered water. Blend until smooth. Add sea salt and blend again. Optional add-ins: dates, cinnamon, maple syrup. Use cheesecloth to strain. Store in fridge for 3-4 days✨

Anyone else feel like they could eat their entire kitchen after working out?? 🤦🏽‍♀️ I quickly threw together these ✨sweet potato black bean burgers✨ using what I had on hand, didn’t measure anything because it’s more fun that way🙌🏼 I used black beans because they are affordable, high in fiber and protein, and a great source of antioxidants. Keeping cans of beans handy is an awesome way to ensure you always have some sort of protein source around AND have something to eat for when you’re short on time💯

Growing up Reese’s was my absolute favorite candy, so it’s surprising it has taken me this long to make a healthier version. These are super versatile - you can use almond butter instead, add other nuts or seeds, leave out the sweetener, etc. It’s safe to say these will not last long in my house💯 . Peanut butter cups🍫🥜: •1/2 cup carob powder (can sub cocoa) •1/2 cup coconut oil •1-2 tbsp sweetener of choice (I used maple syrup) •1 tbsp flaxseed (optional, but tons of health benefits!) •Salted peanut butter Whisk carob powder, coconut oil, maple syrup, and flax seed together in a bowl. Use a mini muffin tin or put paper liners on a cookie sheet. Spoon approximately 1/2 tbsp into liners and place in freezer until hardened. Take out for freezer, add how much ever peanut butter you’d like (I did about 1.5 tsp) and place back in freezer for 15ish minutes. Remove and add remaining “batter” on top of peanut butter. Freeze for at least 1 hour.✨
