Wolfgang puck said ‘most seasonings are based on family tradition’ and ain’t there a truer word. I’m constantly asked why my cakes are so moist, how I made my dinner, how do you get that cake to rise like that - etc etc - my DM’s absolutely go wild when I put anything cake or food related up. I’m from a real food family, we’ve had chefs, restaurateurs, hoteliers - you name it, we just like to give people good food and watch them smile. As a child I have really really strong, happy memories of food, mum baking bread in the kitchen, my Nan - well tbh I don’t think I actually have any early memories of my Nan not tied to the oven and my grandpa prepping. Even down to family occasions, the first thing we think of is food....when it comes to baking I really try to make it so that each piece of cake is like nothing you’ve had before. Making my own: ganache, growing our own fruit, boiling our own jams - it’s really a very full, very organic process. Without these books, these traditions, I can’t grow....not just as a person, but as a wannabe chef and a baker. Some of these books are from WW1 and WW2 about baking with rations, some are just tiny scraps of paper with my nans and great nans writing on, but ALL of them combined make the perfect dinner or the best bit of sponge. Life is about honouring the past and colouring it with the future, I really really really believe that.
