This creamy broccoli and coconut soup is one of the ways to enjoy broccoli, if you particularly don't like the vegetable.
It is delicious, power packed with nutrients and will keep you warm too ☺😋. Here's how to make it... Oil - 2 tablespoons
Onion - 1 medium, chopped
Garlic - 2 cloves, chopped
Ground coriander - 1/2 teaspoon
Ginger - Thumb size piece, grated
Green chilli - 1 chopped
Brocolli - 1 head, medium
Coconut milk - 1 tin (400ml)
Vegetable stock - 1 cup
Spinach - 2 handfuls
Coriander - a few sprigs
- Cook the onions in oil until soft, then add garlic and ground coriander.
- Allow to cook for 1 min.
- Add the peppers and ginger, followed by the broccoli.
- Pour the coconut milk and half of the stock in the pot and add some salt to taste.
- Cover the pan and allow to cook for about 10 mins.
- Remove from heat and stir in the spinach and coriander.
- Blitz in a blender until smooth.
- Add some of the reserved stock if you like it thin and put back on heat for 2 mins. .

Day 12: Best meal of 2018.
This was actually an accidental meal earlier this year. I was in a real funk with my food and weight and all of that and had been binging a lot. Until one day I had a big craving for something fresh and green and comforting. I looked inside the fridge and this is what I had: some wilting Brussels sprouts, carrots, one potato, a dated bunch of kale. And then I remembered the homemade bone broth that had been sitting in my freezer for months. And voila, 20 minutes later I just added some leftover rice and chicken and had the most delicious soup.
I don’t know whether it’s the broth or just combination of flavors and colors but my body craves this soup regularly now and it’s become a favorite staple in our house.

Got my second batch of deer jerky marinating in my fridge and just finished making hot and sour soup with my boy. We add spinach, 1 egg, edamame, and carrots and cut down on the rice vinegar though. It's perfect. A productive Sunday so far!! #healthy #yummysoup #imgoingtonosh #cookingwithmyboy
Copy cat Olive garden zuppa Toscana soup has become the fast favorite with my kiddos, so it's been on heavy rotation in our house! So I adapted a recipe I found for the slow cooker.Use a pound of your favorite sausage, I like to mix mild and spicy, brown with onion, few red pepper flakes and garlic. Cook bacon pieces to add later. I cut 3 russet potatoes and I like to saute them in a lil of the leftover bacon grease. Add sausage and potatoes to slow cooker, cover with chicken broth (32 oz carton)and maybe a lil water. Salt, pepper and a lil garlic powder to your taste. When I cook on low, I set at 6 hours, in last hour I add heavy cream, bacon and well cleaned kale, ripped into pieces. Cook another hour till warmed through. And you have a kid approved soup!
