Lunch used to be by far my least FAVOURITE meal of the day, but I think that was partly due to my laziness. I didn't do enough to "jazz it up" or make it extra yummy!
These days though, I am ALL OVER the lunch bandwagon! It is seriously SO GOOD and SO MUCH FUN to try and figure out new sauces and veggie combos that make my heart sing and my tummy happy!

It’s BBQ SEASON!!! We packed our chopped veggies, marinated salmon, our £2 bbq, and paddled up the river to enjoy this little beauty... bbq season doesn’t have to mean burgers and sausages (everytime 😉).
Sunny Saturday’s are for grounding rituals that bring me a sense of order and comfort. I wake up, watch an episode of SVU (most important part of the day) go the gym, make matcha and avocado toast. Brings me joy and calmness every single time. Happy Saturday!
Hey peeps! Hope you had a great Saturday 💖 I (Sofia 🙋🏻♀️) definitely did, but just a few days ago I felt the complete opposite. Not that anything special happened, I just had one of those days.. The one highlight was this beautiful dish you can see in the picture 🍴
When I was younger I dealt with anxiety from time to time, but I rarely do anymore. Every now and then it hits me and it always leaves me feeling SO IMPRESSED by people who deal with this daily. WOW! 🙌🙏 You’re heroes.
This time around (like most times), it was definitely stress related. I hate that. It’s so not worth it to feel anxious because of work or school, but we’ve all been there. Sometimes, stuff builds up and you just find yourself crying on the subway, trying to hold it back to wait until you get home in order to properly shower cry 😬
During those times, I definitely find comfort in food. I know that’s ”wrong”, and of course turning to food instead of dealing with your emotions will end up hurting yourself. That’s not something I would recommend. However, making sure you nourish yourself and eat something delicious when you feel bad is something I DO recommend 🌟
To me, taking the time to plate my food beautifully and enjoy every bite is important in order to slow myself down🙏 Often times when feeling stressed, we don’t allow ourself to do just that. Allowing myself to take that time and enjoy that moment even when I feel stressed and anxious is something I am working on, but noticing how much it helps makes it easier to make that decision next time. Even if at the end of the day, you still cry in the shower, at least you had a moment of feeling a bit more at ease.

I’ve never been able to make an amazing chilli before,but this time I cooked it on low for almost 3 hours and it made a world of difference! It was so good🤤

This weather is calling for light fruity treats🤗so I made this strawberry protein cakes with thick level of cream and thin crispy crust! They literally melt in your mouth and definitely the good way to celebrate that strawberries are in season 🍓I used Berry protein powder from @freesoulsistas and it's rounded flavour beautifully while boosting the nutrition🤗
For the crust
40 gr buckwheat flakes
15 gr chia seeds
1 tbsp maple syrup
30 gr mashed banana
For the filling
100 gr banana
100 gr thick coconut yogurt
1 scoop of protein powder
1 tbsp coconut flour
1 tbsp maple syrup
70 gr chopped strawberries
pinch of vanilla powder
Add all the ingredients for the crust to the bowl and mix together well. Press it into the bottom of each muffin liner to create the crust (I used silicone molds). Add prepared chopped strawberries as a second layer.
In the blender mix all the ingredients for the filling and pour to top the strawberriesl.
Bake at 170 degrees for 30 minutes. Let it cool completely before removing from your molds.

I wanted to share some tips how you might integrate more greens in your diet: * add them to your smoothies! Especially spinach (either raw or frozen) is almost not noticeable in a smoothie or smoothie bowl if you mix it with sweet fruits like banana, mango or pineapple! 🍌🍊🥦
* don’t make it boring! Greens don’t have to taste bland! Make a yummy sauce for your salad with tahini, maple syrup, lemon juice and mustard for example! Also avocado 🥑 is a great base for a creamy sauce * don’t overwhelm yourself with huge salads if you don’t really enjoy them. Just eat a small salad as a side 🤗 * try different greens! Not everybody is a kale lover so change it up! There’s so many different salads/greens like arugula, iceberg, lamb‘s lettuce, spinach and so on..😊
* put it in your soups! If you are preparing a hearty veggie soup, just add a handful of greens (I again love fresh spinach) to your bowl!
Of course so many of you already knew these kinds of tips but I thought it’s a great way to spice up my caption and I really hope I helped some of you to realize how amazing greens can be 😍

Ein Salat muss nicht langweilig schmecken! Mit einem leckeren Dressing und einigen anderen füllenden Elementen wie zum Beispiel Avocado 🥑🥑ist er nicht nur gesund sondern auch total yummy 🙈🌱🌱

Baking has always been a great way for me to distress. It is simply a zero-sum game; you fail and you learn. But, most importantly, one must have patience. That pie may not be the best, but I'm glad I remained patient in making it- it was such a hassle. Yet, it was worth it. There's always a first in everything! ❤🌞🍎
