Lunch used to be by far my least FAVOURITE meal of the day, but I think that was partly due to my laziness. I didn't do enough to "jazz it up" or make it extra yummy! These days though, I am ALL OVER the lunch bandwagon! It is seriously SO GOOD and SO MUCH FUN to try and figure out new sauces and veggie combos that make my heart sing and my tummy happy! LIKE THIS AWESOME BOWL 😍❤️ SUPER SIMPLE (the best kind of meal in my opinion 😜) and SUPER DELICIOUS 🙌🏻 AND when I eventually make it back out into the work force, this kind of meal is going to be perfect to take along for my lunch breaks 🎉👊🏻💃🏼🎉👊🏻💃🏼 Baby spinach + tomato + onion + chickpeas + avocado + tahini chili sauce WHAT ARE YOUR THOUGHTS ON LUNCH? 🤩

Vegan (duh) chocolate peanut butter and banana muffins. I added some plantbased protein to the mixture and they were a real hit with husband. Soft in the middle and crunchy on the outer 🤤 Off to Perth todayyyyy! Excited to see my fam, but maybe a little more excited to eat yummy food 😂 . 1 cup wholemeal spelt flour 1 TSPN baking powder 1 TSPN vanilla extract 1/3 cup nut butter (I used @thehonestpantry chocolate peanut butter) 1 large banana, mashed 1 TBSP rice malt syrup 1 scoop vegan protein powder (I used @balancesportsnutrition vanilla) . Hey peeps! Hope you had a great Saturday 💖 I (Sofia 🙋🏻‍♀️) definitely did, but just a few days ago I felt the complete opposite. Not that anything special happened, I just had one of those days.. The one highlight was this beautiful dish you can see in the picture 🍴 . When I was younger I dealt with anxiety from time to time, but I rarely do anymore. Every now and then it hits me and it always leaves me feeling SO IMPRESSED by people who deal with this daily. WOW! 🙌🙏 You’re heroes. . This time around (like most times), it was definitely stress related. I hate that. It’s so not worth it to feel anxious because of work or school, but we’ve all been there. Sometimes, stuff builds up and you just find yourself crying on the subway, trying to hold it back to wait until you get home in order to properly shower cry 😬 . During those times, I definitely find comfort in food. I know that’s ”wrong”, and of course turning to food instead of dealing with your emotions will end up hurting yourself. That’s not something I would recommend. However, making sure you nourish yourself and eat something delicious when you feel bad is something I DO recommend 🌟 . To me, taking the time to plate my food beautifully and enjoy every bite is important in order to slow myself down🙏 Often times when feeling stressed, we don’t allow ourself to do just that. Allowing myself to take that time and enjoy that moment even when I feel stressed and anxious is something I am working on, but noticing how much it helps makes it easier to make that decision next time. Even if at the end of the day, you still cry in the shower, at least you had a moment of feeling a bit more at ease. . If you’re feeling low, how do you try to brighten up that day? ✨

I’m back with another fancy Saturday salad for ya, complete with amateurish avocado rose because apparently I haven’t mastered that skill....yet. 🤪 But about this crispy, skin-on “brick” chicken: boneless skinless breasts bring me no joy, and why eat anything we don’t love? So if I’m looking for a super lean protein, I’ll choose a flakey white fish over boring chicken boobs any day. When I do eat chicken, I prefer thighs or breasts skin-on, and I don’t freak out about it. Why? While rich in fat, not all fat is created equal and chicken skin actually contains a ton of the healthy, unsaturated kind that keeps tastebuds happy and tummies full, so I see no reason to skip it as long as I’m enjoying it in moderation. A bit of spring this morning before we head to soccer. Enjoyed my oatmeal smoothie with the sun streaming in. I had oral implants and a sinus lift and bone graft yesterday so I’m on a soft foods diet for a few days. Trying to eat balanced with any diet restrictions can be challenging, but definitely not impossible. Managed some blended beets, strawberries, and banana mixed with Greek yogurt, milk, and oats topped with some peanut butter for a healing breakfast, curried carrot soup & strata from @flourbakeryandcafe for lunch, and scrambled egg with spinach grits for dinner last night. Yesterday’s lunch was sweet potato and cottage cheese and snack was yogurt mixed with peanut butter and avocado. • • Smoothie Oatmeal Bowl Recipe • • 1/2 c unsweetened almond milk • 1/2 c milk • 1/2 c plain Greek yogurt • 1/2 ripe banana • 2 frozen strawberries • 1 roasted beet • • ➿Blend the above ingredients. ➿Then add 1/2 c old fashioned oats mixed with GF 9-grain cereal. Microwave for 2 minutes ans top with sliced banana and creamy peanut butter. I have to admit I like pizza without cheese even more than with, when I already ordered cheese less pizza bread quite often before I went been vegan, just because I liked it more 🍕 This one has been with grilled veggies and a wholemeal spelt dough and a delicious tomato sauce. I topped these tarts with some cocoa nibs, raspberry and drizzled some delicious vegan chocolate fudge sauce from @naturescharm 😍 . . Recipe (makes 3 mini tarts or 2 x 6”tarts) Crust 1 cup gluten free rolled oat 1/4 cup almonds 1/4 cup wholemeal wheat flour 4 tbsp coconut oil 4 tbsp agave nectar (or maple syrup) 2 tbsp cocoa powder Preheat oven to 350˚. Pulse oats, whole wheat flour and almonds until oats are coarsely ground. Add coconut oil, agave, cocoa and salt, pulse until mixture looks like wet sand. Firmly press into bottom and up the sides of tart tins. Bake until crust is golden brown and smells toasty, 20–25 minutes. Transfer to a wire rack and let them cool. Filling 1 cup cashew nuts soaked 1/4 cup coconut milk 2 tbsp maple syrup 2 tbsp cocoa powder Add all filling ingredients in a food processor, process until smooth. Fill the tarts with chocolate cream. And serve with choice of toppings. This weather is calling for light fruity treats🤗so I made this strawberry protein cakes with thick level of cream and thin crispy crust! They literally melt in your mouth and definitely the good way to celebrate that strawberries are in season 🍓I used Berry protein powder from @freesoulsistas and it's rounded flavour beautifully while boosting the nutrition🤗 Recipe For the crust 40 gr buckwheat flakes 15 gr chia seeds 1 tbsp maple syrup 30 gr mashed banana For the filling 100 gr banana 100 gr thick coconut yogurt 1 scoop of protein powder 1 tbsp coconut flour 1 tbsp maple syrup 70 gr chopped strawberries pinch of vanilla powder Preparation Add all the ingredients for the crust to the bowl and mix together well. Press it into the bottom of each muffin liner to create the crust (I used silicone molds). Add prepared chopped strawberries as a second layer. In the blender mix all the ingredients for the filling and pour to top the strawberriesl. Bake at 170 degrees for 30 minutes. GIMME GREANS AND I‘M HAPPY! 🙈🤗🌱 What about you guys? Do you love your greens or is it always a bit of a struggle?! I wanted to share some tips how you might integrate more greens in your diet: * add them to your smoothies! Especially spinach (either raw or frozen) is almost not noticeable in a smoothie or smoothie bowl if you mix it with sweet fruits like banana, mango or pineapple! 🍌🍊🥦 * don’t make it boring! Greens don’t have to taste bland! Make a yummy sauce for your salad with tahini, maple syrup, lemon juice and mustard for example! Also avocado 🥑 is a great base for a creamy sauce * don’t overwhelm yourself with huge salads if you don’t really enjoy them. Just eat a small salad as a side 🤗 * try different greens! Not everybody is a kale lover so change it up! There’s so many different salads/greens like arugula, iceberg, lamb‘s lettuce, spinach and so on..😊 * put it in your soups! If you are preparing a hearty veggie soup, just add a handful of greens (I again love fresh spinach) to your bowl! Of course so many of you already knew these kinds of tips but I thought it’s a great way to spice up my caption and I really hope I helped some of you to realize how amazing greens can be 😍 * * Mögt ihr Grünzeug aka Salate und alles an grünem Gemüse?! 🥦🥒🥗🥗 Ich stehe total auf Salate und leckeres Gemüse und bin der Meinung, dass es oft an der Zubereitung liegt, ob man auf Salate oder ähnliches steht! Was craving veggie burgers for the longest time and today I finally made some 🤓 These are black bean patties with chunky guac, baked sweet potato, sweet corn, lettuce and tomato (not for me because I‘m kinda allergic 🙁) sandwitched between a whole grain bun 👌🏼The patties are so easy to make and really good! All you need: 1 can black beans 1 cup oats 1/2 onion 1/2 clove garlic Lots of spiced (I used pink salt, pepper, cumin, cayenne) A splash of hot water 👉🏻 Blend everything in your food processor until well combined and form patties out of the mixture. Fry in some coconut oil on medium heat until firm and cooked through (don’t forget to flip it!) and serve in a bun with your favorite toppings 🍔 Enjoyyy! How’s everybody’s weekend going? Baking has always been a great way for me to distress. It is simply a zero-sum game; you fail and you learn. But, most importantly, one must have patience. That pie may not be the best, but I'm glad I remained patient in making it- it was such a hassle. Yet, it was worth it. There's always a first in everything! ❤🌞🍎
