I could learn a lot from this girl of mine. Her entire life we have told her avoid eggs, check the ingredients, you can’t eat that but we’ll make it special without eggs for you at home. Since before I can remember, we’re talking even before 2 years old, she’d ask people to read the ingredients before feeding her anything and in her sweet little squeaky voice say “I can’t have eggs or nuts.” But then today, after that being engrained in her head all these years she sits here with an eager smile on her face and complete and utter trust in her Mama (who was basically putting on an Oscar nominated role in not freaking out) and her doctor, because (something else she has learned) we trust our doctors and they have our best interest in mind. Her outlook is bright and without hesitation (well maybe a little bc #rulefollower
habits don’t break that easily) and ate 3 doses of a muffin baked with egg in it. She was so brave, so happy and always smiling. After the 3rd dose she developed hives and a red/hot itchy ear so we stopped. Our answer was loud and clear at that moment that this girls’ egg allergy is the real deal even in baked goods. But we would have never known had we not tried! So now our plan moving forward isn’t an easy one but it’s one that will ultimately be her safeguard throughout her life (and Lola’s too). We will be starting both girls in OIT (Oral immunotherapy) for peanuts and adding eggs to Joie’s as well. For 5-6 months we will make the 1.5 hr drive down to Sarasota for weekly appointments with our allergist for “updoses” and the goal is to reach maintenance for each of the girls’ allergens! This means (depending on how they take to the treatment) they may be cleared for free eating of it but at the very least they’ll be safeguarded if cross contamination ever occurred!! I will take you all on this journey with us and I pray for a smooth ride for my girls! Oh what a day!! Oh, and her shirt was totally for me! If you're an allergy mom and have to take your kiddo for a food ingestion challenge, you know how painfully long those appointments can be! Today this happy boy went in for a baked egg challenge and PASSED 🎉🎉🎉 We are SO excited to add this to his diet and are so hopeful that he will eventually outgrow his milk/dairy and egg allergies altogether. Peanuts are a different story!
We were at the appointment for 3 hours and he refused to stay in the room while waiting. That was fine and dandy until he realized he could open the door himself and walk out 🤦🏻♀️ We saw #babyshark
a couple of times, but this mama had to REALLY work to keep this boy entertained (without a phone) and avoid meltdowns, without my go to friends - SNACKS!
Sooo...he caught up on some paperwork at the office, played, then went back to his new corner office to test out his new chair. We walked up and down the hall at least 10 times. Then mommy got silly and decided to take his blood pressure and check his weight. We also rode the elevator 1,000 times and capped off our excursion with a Golf magazine 😂😂😂 It was a long afternoon but I had a blast taking these pictures with him and I am a very happy mama tonight!

Having 4 kids isn't easy. Every child is SO different. My second born, Fletcher needs extra attention. If he doesn't get "alone time" with me he can get really nutty. He can get super hyper, nutty, doesn't listen, etc. It also has a lot to do with food. He can't have a lot of sugar or carbs or he also spirals. Sometimes when he's crazy, to calm him down and bring him back to "normal", all I have to do is lay with him alone in his room for a few minutes. Which can be easier said than done with more than one child involved. Another thing that has been great for us is doing puzzles together. Not kid ones. Adult 1000 piece puzzles. He's surprisingly good at them and it really helps him focus. We just finished this one (yes it's a beer puzzle, don't judge). He's been waking up with me early just do have the alone time with me to tackle it. I honestly LOVE doing it with him. Finding the time is hard, but when we do, it's special and SO worth every minute.
Serious question. Has anyone EVER had luck with making pancakes with coconut flour? Seriously? It crumbles, it's stupid. Right? I love the idea of it, but I can't for the life of me get them to turn out. This batch was a total flop. I ended up adding more liquid (almond milk) and a few other gluten free flours I had kicking around to make it work. On a plus side I ended up with a ton of pancakes. So, is there a secret? Is the secret just don't do it?

More allergy testing happened today and we also got our blood test results. Looks like Ophelia's sesame and egg allergies are pretty bad but her peanut one is pretty borderline. My allergist says that it might be a good idea to do an oral challenge with peanut at the hospital. Clearly there are risks involved in doing this, like anaphylaxis but also benefits like exposing her early so she could potentially grow out of it. She also seems to think that babies anaphylactic reactions are often less severe than when you get a little older. When I asked what she would do if it were her child she said she wasn't sure. She is going to bring her chart to the hospital to discuss it with the other allergy experts before answering that question. Anyone else have to deal with this? Did you do the challenge? I'm on the fence...leaning towards no.
So I decided to get the food sensitivity testing for myself. I find this stuff fascinating and I was super curious. Does my random brain fog stem from something or am I just tired because I have a zillion kids? These questions keep me up at night (which could also be causing the brain fog), so I had to do it! I just had to!
So my results are shown in the first picture...and man...I feel like a picture of perfect health!!!! I have some elevated stuff but like 12 I feel is nothing! Perhaps it isn't that great, maybe I should be at 0 to be happy? But I feel like it is great because look at the second picture. Fletcher's results. See the difference? 12 doesn't seem so bad, and even the things I have sensitivities too are less elevated than his.
Most of the stuff on my list I don't eat much of anyways. So I'm going to eliminate the things I do: eggs and dairy (goodbye butter!) for a couple months and see how I feel. I don't think I'll be saying goodbye too long, maybe just see you later.
Anyone else do these tests? What kind of results did you get? Is 12 like normal? Curious where I stand with the rest of the world.
Our lives just got a little more magically delicious! We passed a food challenge to Oats a few days ago! We hit up mainstream cereal aisle to celebrate!!! He loved the oatmeal at the hospital but he is he’s loving cereals as well! Also lots of wheat free products contain oats which we couldn’t try in the past making this Mom do a tear filled happy dance!!!

Last year Fletcher was afraid of slides, our pool’s deep end (with his puddle jumper on), and riding his bike (with training wheels). This year he asked his daddy to do this. I mean, what? He is also successfully swimming all over our pool without a jumper, learned how to ride his bike without training wheels and is trying to master skateboarding (help me!). I can’t believe how far he has come in a year. How he has overcome so many fears and gained so much confidence. I am so proud of him and I’m also slightly worried (mostly about the skateboarding 😜).
A morning at the beach, a 3 hour drive home, a poutine, a smashed phone (fyi, don’t put your phone on the roof of the car and drive away.😭), some preworkout and I just KILLED a chest and triceps workout!👯♀️
Old me would have never even considered that! But I have a program that’s all laid out for me, I’m obsessed with the workouts, and coaching really does gives me the ultimate accountability!

Are you ready for the easiest gluten free and vegan pancake recipe EVER? I got the original recipe from @thequeenofdelicious
(search vegan pancakes on her blog...she has tons of good stuff) but I totally screwed it up. Yes I screwed up a 4 ingredient pancake. I forgot one ingredient. How? I’m cooking with a 3 and 4 year old and a baby on my hip, it happens! Anyways I forgot a whole cup of almond (or other plant based) milk. But somehow the pancakes came out perfectly! So I ran with it. So I’ve taken a 4 ingredient pancake and accidentally made it a 3 ingredient pancake.
Recipe: 1 cup quinoa flour (or other gluten free flour... I’ve never had luck with coconut flour for pancakes though...maybe I’m cursed). 1 cup sparkling water (or 1 cup plant based yogurt) and 1 tsp baking powder. That’s it. Fried up in some coconut oil and boom, pancakes! I made 3 batches because this is what I do when I have breakfast success. Also because I have a lot of children.
What better way to end our week than a trip to the splash pad with Auntie! My sister is a 4th year OB/GYN resident (who actually delivered Scarlett!) and has been on vacation this past week. We’ve loved being able to spend time with her!! Scarlett is obsessed with the water and Viv isn’t too sure.
