I still have no idea what happened with my Citrus Olive Oil Cake yesterday, and I was too mortified by it to take a picture before throwing the whole thing away, but I do feel like it’s sort of the perfect representation of 𝐌𝐄 right now; 𝘭𝘰𝘰𝘬𝘴 𝘰𝘬𝘢𝘺 𝘰𝘯 𝘵𝘩𝘦 𝘰𝘶𝘵𝘴𝘪𝘥𝘦, 𝘣𝘶𝘵 𝘪𝘴 𝘢 𝘵𝘰𝘵𝘢𝘭 𝘮𝘦𝘴𝘴 𝘰𝘯 𝘵𝘩𝘦 𝘪𝘯𝘴𝘪𝘥𝘦! 😂
Anyway, this coffee cake was delicious, and I topped it off with a lemon glaze (I used Confectioner’s Swerve sweetener with lemon juice and some lemon zest), and of course enjoyed it with a cup of coffee (or two).
I’m so obsessed with @theplantparadox
cookbook, and have every intention of documenting the (successful) recipes I make from it in an attempt to convert you all! Muahaha!
