How do we do it?
First we bring the 🐙 to the boil in cold water, we then remove from the water and plung into a ice bath. Next step is place the 🐙 into a clean pan. Cover with chopped onions. Carrots. Leeks. Couple of oranges cut in half.
We also add a mix of aromats and soft herbs. Cover with water. Add a large pinch of salt and bring up to boil very slowly. Once boiling we remove the pan from the heat. And leave to cool to room temp. The result is super tender and flvoursome. Ready to BBQ or grill. Or slice for sashimi

King oyster mushroom or the poormans cep 😂😂 really like the Flavour you can get from them if you cook them well.
We compress them 1st in aromatic oil and then cook like you would a piece of meat.
