I resisted starting AIP because it seemed overwhelming. I avoided reintroducing foods because I was afraid of having a reaction. Fear ruled my actions, not just with my health, but with my entire life. Over the last couple years I’ve realized that fear and perfectionism have no place in my healing journey (or my life.) .
Finding AIP set me on a path to heal from autoimmune disease. I never expected that through healing my illness, I would also heal my life. I’m more free, more happy, more comfortable in my own skin than I ever was before. Strangely enough, getting sick ended up being the best thing that ever happened to me. .

I have started adding fresh celery juice to my routine of a morning, after reading a lot about it’s benefits amongst the health and wellness community. I am on a mission to lower my blood pressure naturally and get off some of my medication...so this will be just one of the changes🥤 .

💟1/2 taza de harina o almidón de yuca
💟1/2 cda de levadura nutricional (opcional)
💟1/2 cdita de cebolla en polvo
💟1/4 cdita de ajo en polvo
💟Sal marina y pimienta al gusto
1️⃣ Licúa todos los ingredientes
2️⃣Coloca una parte de la mezcla sobre un sartén bien caliente simulando la forma de un círculo o disco y deja que se cocine por 1-2 minutos
3️⃣En el centro del disco coloca tu relleno favorito: puede ser tocino, carne, pollo, champiñones, lo que se te ocurra 🙂🙃
4️⃣Ayúdate con una espátula y cierra el disco de un lado hasta formar una media luna o empanada, presiona suavemente para que se cierren bien los bordes
5️⃣Deja que se cocine por 3 minutos y voltea por 3 minutos más ¡Listo! A mí me alcanzaron 6 empanadas pequeñas

Golden Turmeric Energy Bites
Recipe by: Megan Olson
• 1 cup almond or coconut butter
• 3/4 unsweetened coconut flakes
• 4-6 T plant based protein powder
• 1 t coconut oil
• ½ t maple syrup
• 2 t turmeric
• To a blender, add nut butter, ½ coconut flakes, almond butter, coconut oil, maple syrup, protein powder and turmeric.
• Blend ingredients on high until evenly distributed.
• Place the dough in the refrigerator for 30-60 minutes to harden.
• Remove the dough from refrigerator and roll into bite-sized balls about ½-inch in diameter.
• Place balls on a plate that’s covered with parchment paper, then return to refrigerator for 3-4 hours.
• Remove from refrigerator. Add remaining shredded coconut to a plate and roll the balls in the flakes. Enjoy!

and it’s very informative. I don’t just do Keto to lose weight, I also do it because I know a diet high in carbs and sugar isn’t the best for you (high in them I’m talking about, not occasionally eaten). I know if I do consume carbs or sugar my body instantly craves them after, like I become insatiable, wanting more and more for every meal, and it becomes harder to curb back the servings, so I like to avoid that endless cycle 🙄and try to have an extremely low amount of both. .
Back to the book...I’m also going to start implementing small parts of this diet in with keto. Because, I also want to have a low-inflammatory diet that is more in a restorative mode than a defensive one. HEAL THE GUT! I’m starting out slow, small steps!....Like voiding out peanuts and peanut butter, eating cheeses from goats and sheep, or dairy from Southern Europe, wild-caught seafood, pasture-raised meats. .
