Have you heard of cheese cultures or starter cultures? The first stage of cheesemaking is to ripen the milk using starter cultures. During this process lactose (milk sugar) is slowly converted into lactic acid (which give you the flavor and texture of cheese). Most (if not all) cultures come from Europe - they arrive frozen and activate when added to the milk.
Every cheesemakers plays with different cultures to develop their own distinct flavor.

in Washington. .
. John and Marci Shuman moved to Trout Lake, Washington about a decade ago. A traditional dairy and logging area, Trout Lake and the surrounding area is home to rich pastures, and below the green grass are naturally occurring lava flow tubes – prime real estate for aging cheese. .
John, the cheesemaker, learned the interworking of cheese making while interning with a local dairy farmer, and now he makes 5 different cheeses that are not only available, but sought after across the country. .
While the demand for their cheese would allow them to produce significantly more cheese than their current output, their physical space has them maxed out, producing around 100 wheels of cheese every few days. .
Their most popular cheese is Sleeping Beauty, a natural rind wheel of about 5 lbs. It is buttery and slightly complex,
with a delightful hint of lactic sweetness.
Glacier Blue, their lone blue cheese, is also a natural rind (not
wrapped in tin foil like many domestic blue cheeses) that is dryer than average which condenses the earthier notes that come from the cave in which it is aged for about 75 days. John calls this a “gateway
blue,” because it is mild and melts on your tongue “if you weren’t a blue lover before, this cheese will open that gate.” All of their cheese are certified organic and made with unpasteurized, raw milk.

AWARD WINNING ARTISAN CHEESES 🧀
I have been eagerly waiting for my box of handmade cheeses from @teesdale_cheesemakers
today. If you enjoy eating good quality food and ingredients like me, you should check them out. It’s a family run business using cows milk and traditional methods to make all sorts of cheeses, using local suppliers 🧀 From the crumbly Doris to the soft, indulgent Teesdale Blue, which is creamy and has a ‘deep rich blue undertone’. What I haven’t seen anywhere else is their sweet cheese range like their lemon curd one. Smooth over a ginger biscuit and you have a mini cheesecake!
P.s If you don’t live near Teesdale you can order online!
A *mix* of Gouda and Pecorino, that is.
