Quando 3 anni fa ho cominciato a studiare impiattamento creativo non riuscivo a trovare nessun libro dove studiare, neppure in inglese o francese. Ricordo che feci molte ricerche, contattai anche alcuni professionisti del settore delle ristorazione per avere delle informazioni ma niente....l’impiattamento era patrimonio solo dei ristoranti stellati e quindi inarrivabile per me che non li frequentavo per motivi economici. Poi cominciai a fare delle ricerche su you tube e trovai dei video di giovani chef che mostravano i passaggi dei loro piatti creativi, ma non erano mai citate le ricette ne le linee guida che regolavano la composizione degli ingredienti. Così a forza di tentativi ed errori, la cucina sporca di olio e qualche pentola bruciata, mi cimentai nei coralli, nelle cialde di riso, nel caviale di pomodoro, nelle salse da stendere con il cucchiaino e quelle da spiralare con il biberon. Poi guardavo su ig i piatti dei grandi chef e facevo schizzi con le matite provando a dare un senso logico a quelle pietanze posate sul piatto. Pian piano però le nozioni dei miei studi in architettura sui volumi, i chiaroscuri, i colori e le texture mi fecero da spalla e provai a creare degli impiattamenti tutti miei. Alla fine quel libro che tanto avevo cercato l’ho scritto io, fotografato e cucinato...e sono convinta che vi sarà di grande aiuto se siete appassionati della cucina bella e buona. Oggi poi voglio farvi un regalo, cioè vi mostrerò una nuova ricetta molto semplice che potrete trovare dentro “a scuola di food design”. Sono dei fusilloni al pomodoro e burrata con cialde di parmigiano e caviale di basilico. Il piatto si chiama “fusilli 2.0” proprio perché è la reinterpretazione gourmet del classico piatto di pasta al sugo. Vi aspetto su Piattoforte.it con accesso diretto dalle stories o nei commenti. So many of you wanted the recipe for the green pea soup, and I'm so excited that my friends @alislamifoods sent across this video of me making it to share with you. Many a times you guys have asked me to do a video of me plating a dish, you will see a bit of that here too! Hope you enjoy it! Have a lovely day!💚 . . Detailed recipe below: GREEN PEAS SOUP INGREDIENTS: -1 cup- @alislamifoods green peas (boiled) -1& half cup- Potatoes boiled and chopped (medium size) -5-6 cloves Garlic chopped -3-4 cloves Garlic sliced and fried -2 tbsp Celery chopped -1tbsp Fried onions/ sauteed onions -1 Cup Low fat milk warmed -1 Cup Green pea stock/vegetable stock -8-10 Peppercorns -5-6 Soaked cashews Salt to taste -Oilve oil 1 tbsp and some more for garnish. -7-8 Cherry tomatoes to garnish -Pumpkin seeds to garnish -Cream to garnish  RECIPE: Heat oil in a skillet. Add chopped garlic and sautee till golden brown. Add fried or sauteed onions. Add celery till cooked. Add the peas and sautee for a minute.  Add potatoes and remove from the stove. Add this to the blender with milk, salt, pea stock/vegetable stock and cashews. Blend well. Pass through a sieve. Warm and serve topped with garlic chips, cream, olive oil, pumpkin seeds and cherry tomatoes. Good morning guys!! Khooba roti: a rustic preparation with lots of love from #rustic #rajasthan I Followed the recipe of @sanjeevkapoor but with some changes. I added corn meal, soybean flour and besan to whole wheat flour. Apart from Carom seeds (ajwain) I added red chili powder and turmeric to bring some colour and zing in the roti. I loved this recipe a lot and I wanted to try out as soon as I read it. I'm not a trained chef nor have I gained lot of experience in the kitchen. I can only bring some minor changes to existing recipes, so I try to do my best to innovate in whatever way I can. Make sure that you try this awesome recipe and add your own twist to it.
