I have been thinking about the balance of the food for a long time. Satisfied and beautiful. Fine dining experience and purely satisfied food. Which one more important? Can I have both? Salmon with crispy skin, pumpkin purée, pumpkin sheets, pumpkin powder , roasted pumpkin with green chili, cured tomato. (I still have pumpkin form, fermented pumpkin, and pumpkin consommé, pumpkin Gel didn’t put into my dish) Pumpkin is one of my favorite ingredients. Natural sweetness and freshness, lots of potential to become everything! Also, when I cooking fish, I prefer gentle heat to cook it, like poached, sous-vide, confited, low heat to seared. Because fish is a very delicate meat, I don’t want anything suddenly heated to destroy the fish. This idea was terrible. At the beginning I just wanted to try an old cooking method call En pappilotte. But I think why I cannot turn traditional fish tartare to another expression . I would say sometimes I will combine the things I saw from books or online or even some chefs work, with the experience that I have before like the food I ate in many places or old memories. Why I can’t use this ingredients to make this? Can I change the texture or presentation but keep this flavor? Why I can’t do some fun with my ingredients? I want my guests surprise. Also I hate wasting food, I keep thinking how to use all the off cut from our food and make something good. And not just make the dish, but also can explain some food culture, of course must taste good. This is one of my way to create some dishes. I know, at least half of the experiment may come to nothing, but just don’t give up, keep trying and trying.
