Quick dinner. White miso marinated salmon, baked red cabbage infused with chili ginger and garlic, aged cheddar Pomme purée, corn crumbs and tomato powder, parsnip chips. So good! Miso marinated salmon for 10 minuets, then wiped away, finished on the pan. The skin just incredibly turned golden color! I mean the real gold color! Amazing. Miso always one of my favorite ingredients. This dish full of Asian influence. Dry cured salmon for 20minutes, then smoked for 10minutes, quick seared to crispy the skin. Then torched to enhance the smoked flavor. It looks over cooked a little bit. But I think is the cured effort. Smoked cured salmon, grilled cabbage, wasabi mayo, horseradish pickled, and shaved truffle .

Lamb neck~ Roasted lamb neck with anchovy, caramelized leek and carrot, broccoli and green peas purée, tomato powder, butter milk emulsion. It took 2 days to finish. Braised lamb neck with rosemary and anchovy, broke down and rolled into sausage sharp, put into fridge to set. Then finish it on hot pan. Very nice flavor and crispy outside.

Duck filet! Honey glazed Duck filet with wild peppers, truffle & wasabi taro purée, caramelized cabbage and burned butter shortbread crumbs. My method to cook the duck, poached the duck with Chinese light master stock at 60’c for 1hour, then chilled the breast, place the skin side down on cold pan, finish with crispy skin, glaze with Sichuan peppercorns and mix wild peppers. The flavour was phenomenal! (In my point of view, I think duck always the good company with honey,ginger and Sichuan peppercorns, lamb always compare with rosemary and anchovy , beef perfectly compare with star anise and garlic, pork with sesame) LoL~

Perfectly roasted baby potatoes, very deep potato taste and again, I love the crème frâiche! Borrowdale pork rack, farm beetroot, cos,ranch dressing & roasted stone fruits sauce! The confit egg yolk is perfect for beef or even everything which you want to add some creaminess in it! So creamy like hollandaise sauce! Or even for pasta like carbonara ! Confit salmon with fresh butter, crispy tapioca cracker, green pea + macadamia + goat curd purée, salmon skin cannoli and caramelized beetroot, wasabi oil It’s very time consuming to make the tapioca cracker , but the taste was much much better then rice paper cracker. Also the salmon skin cannoli was so funny and the filling was so creamy with the purée! Perfectly cooked salmon fillet!

Quick cured salmon with pink salt+sugar +lemon zest +beetroot +lavender. About 15mins. Then smoked in my pan , used oak chips,warm smoked for about 12mins. The favor is a surprise. Very fragrances and fresh! But the thing is, I should cut smaller size before cured. Then I can have more control of the time. Seared Quick cured salmon, crispy skin cone, roasted beets, broccoli and horseradish emulsion.

It took me three days to finish it. First, Brined to overnight (2.5%salt+sugar). Second, simmered in braising liquid (star anise +dried orange skin and so on) for about 1 hour then cooling in the liquid for overnight. Third, sous vide with little liquid for 12 hours. Then put in ice water, easy to peel the tough skin, portion then finished on the hot pan. The result is amazing! Still keep the nice shape and juicy but very easy to cut like butter , and tons of the favor! Slow cooked beef tongue, cauliflower and spring onions purée, blistered asparagus and grilled cauliflower, braised liquid and Madeira reduction sauce.

Day 1: Brined in 2.5% salt+sugar for one night. Day 2: sous vide at 68’c for 6 hours with Chinese salted pickled dry cabbage and star anise and chili and soy sauce(inspired by famous Chinese dish—Braised pork with preserved cabbage in soya sauce) . Then brushed vinegar just on skin and uncover in fridge to dry the skin. Day 3: rock salt on the skin, roasted 180’c for 10mins , 230’c for another 10mins. (The result was not as good as I thought, texture and juiciness were great, but favor taste nothing but pork. Need to think about how to enhance the aroma) #anovafoodnerd

The most important thing I learned this time is, I need to use the bench to do all my stuff but looks like I never use the bench! Organize! 3 hours, present 3 courses*4 portions, we can see all the ingredients until the competition begins, also we need to use all the ingredients from our black box. This time we don’t have any cheese ,for fruits, just fig,orange and lemon...So heavy pressure ! My menu: entree(Steamed snapper with Daikon, crispy Kale, pickle Jersulam and soy sauce vinaigrette) main( Roasted Lamb rump in 109’c oven until reach 62’c, braised kohlrabi, glazed baby carrots, carameliza onion and potato fondue, jus) dessert (Carameliza fig chocolate tart, Chardonnay sabayon, walnut praline and beetroot foam) Keep working on it!!!!
