Coopers pale ale slow roasted lamb loin, black garlic romesco, pea purée, scallop, board bean, cherry tomato, pickled Daikon, morel and Jus The favor were amazing, especially the black garlic romesco! And the lamb perfectly cooked, stared with cold pan without oil to wendom the fat from the lamb, seasoned with anchovy and rosemary , shallots , garlic, de glazed with pale ale , then put in 109’c oven to roast. Until the meddle reached 62’c. Quick dinner. White miso marinated salmon, baked red cabbage infused with chili ginger and garlic, aged cheddar Pomme purée, corn crumbs and tomato powder, parsnip chips. So good! Miso marinated salmon for 10 minuets, then wiped away, finished on the pan. The skin just incredibly turned golden color! I mean the real gold color! Amazing. I went traditional style tonight ~ Amazing Wagyu Ribeye from @peteraugustusau ! Pan seared Ribeye and finished in oven, tomato powder, burned leek, cured organic egg yolk, confit garlic and one head black garlic, katsuo fumi furikake, X.O. Jus. When I dealing with good quality steak, I always uncovered it and put it in fridge to overnight, must must dried the surface as possible as you can before you cooked it!
