Prawn, mango and avocado salad 😋 . This is another super easy but tasty salad! It’s probably pretty clear that I really love salads! 😆🥗 It’s all about using the right ingredients and making sure it’s going to be filling. Latest salad recipe below: . 100g prawns, cooked 1/2 avocado, cubed 1/2 mango, cubed 1/4 continental cucumber, sliced Handful of lettuce, chopped 2 tablespoons continental parsley, chopped 2 tablespoons olive oil Squeeze of fresh lemon juice . 1. In a bowl, combine prawns, avocado, mango, cucumber and lettuce. 2. In a separate bowl mix the olive oil, continental parsley and lemon juice. 3. Easy No Boil Shrimp and Veggie Bake Who doesn't love an old fashioned shrimp and crab boil jam packed with white potatoes swimming in cauldrons of sodium ladened hydrogenated fat. Wait what? Now that I think about it maybe we need to clean that one up an scale it down to make it mycleansmallplate approved which is super simple to do! Ditch the cauldron iodized salt fake fat and white potatoes and we've got the beginnings of something amazing here. All we have to do is pull out the trusty sheetpan and load it up with thawed shrimp and/or crab legs. Add the veggies of your choice. Drizzle with evoo. Sprinkle with the low sodium seafood seasoning  or better yet salt free seasoning of your choice and finish with a light dusting of smoked paprika sea salt fresh ground paper.  Top seafood with a dollop or two of the heart healthy butter of your choice. THIS is meal prep! This was a first in prepping THIS many meals (only comparison was food prep for hubby when I was roadtrippin for 5 wks) and guess what... I did not dedicate day after day to this labor! Pretty much all of the food in this freezer was the result of leftovers, with a few exceptions of prepped meals that may still need to be popped in the oven or slow cooker. We would cook dinner (or lunch) and stash whatever was not consumed immediately. Result? it’s been ONE YEAR since I was diagnosed with hashimoto’s thyroiditis - a chronic autoimmune thyroid disease than affects over 14 million women in the US alone - and also the reason that I went #glutenfree ‼️ what a year it has been - from being so exhausted each and every day to the point where I couldn’t even get out of bed in the morning, to running my first 8K this weekend (next time it will be the half!! 😉) although though there have been some bad times, i am incredibly grateful for the blessings this disease has brought me - such as a reason to build this platform to be able to connect with so many AMAZING humans & inspire others to make their own health a priority in their lives. it has also taught me to speak up & advocate for my own health - if i hadn’t done my own research and asked difficult questions, i would probably have no idea how harmful and inflammatory gluten is for those with hashimoto’s and i would still be eating it and feeling terrible. always take everything your doctor tells you with a grain of salt, and never be afraid to speak up about what feels right for YOU and your own body - even if other people don’t agree w you ✌🏼
RECIPE BELOW // AIP Holiday Appetizer Platter ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Instead of laboring over a cooked appetizer for your next holiday gathering, why not try a holiday appetizer board, AIP-style? ⠀⠀⠀⠀⠀⠀⠀⠀⠀ With a mix of charcuterie, fresh and dried fruits, as well as some ferments, an appetizer board is a tasty way to provide snacks for a crowd with very little effort. You can easily swap out the fresh or dried fruits for other options, like figs, apricots, or apples. Almost 6 months ago I started the autoimmune paleo protocol, otherwise known as AIP. After 3 months, I was retested for my disease marker and it was undetectable. Gone. 🙌🏼 AIP worked for me, and since then I’ve been playing around with reintroductions and this phase has been a lot harder than I imagined. Strict elimination was much easier, and I had no idea the way your brain works when you open the door to reintroduce one by one, how quickly you convince yourself that it’s okay to try anything. I haven’t touched gluten, but nightshades, nuts, seeds, rice, dairy, soy, processed sugar, and eggs - all of it I’ve ventured into as a “little bit here and there”. Just a cheat. Playing a “mostly aip/paleo” game. And my body is hurting. So I know I have to roll it back to full AIP again and do reintroductions the right way. Truth is, that it can be kind of exhausting to live this way. Sometimes, you really, really, really don’t have the energy to cook something from scratch the AIP way. Sometimes, you just want to eat the SAD and order a pizza like everyone else, you know? #itisajourney . We have the plumber here today and water shut off, but once he’s gone, I’ll be meal prepping some AIP staples so it’s less tempting for me to go rogue. An all time favorite is cassava flour tortillas and I’ll be making some AIP cookies, too, and maybe ordering some AIP convenience foods/snacks to make things a bit easier for me. Day 2 of the accidental #BWWchallenge was a success (I mean really, not a huge effort to swish coconut oil around for 10 minutes, but it's building the routine I'm proud of). I wasn't expecting so many of you to be into the idea, but it just became it's own thing and I love that we're adding something positive to our lives together! #dentalhealthFTW (what an odd hashtag) I've gotten some questions about it so let me clear up a few things: 1. Oil pulling doesn't harm your enamel. All the research I've done has actually suggested the opposite, because it binds to and "pulls" the bad bacteria (i.e. S. mutans) that can cause gum disease and enamel decay. 2. Remember: this is in ADDITION to your regular dental routine. Wake up, floss (lol I know, me neither, but let's try), oil pull, brush. Done. 3. If you can only do 5 minutes, start there! Realistic wellness is about taking bite-sized, doable steps toward your larger goal. Eventually, you'll get there and it won't feel so big. However, I'd challenge you to throw in the oil in while you're getting dressed or making breakfast--my guess is you'll forget and probably even go beyond 10 mins. 4. Sesame oil is also fantastic for oil pulling because it's a strong antimicrobial, so go ahead and use that if you want. 5. Personal experience: SUPPRESS THE URGE TO SNEEZE. Unless you want coconut oil everywhere. In which case, weird flex but okay. Our Walmart finally has them!!!! I got all of the options my store has. This was pretty good! I am so thankful this option is available for many reasons, budget being numero uno!! . Even though I now have a Natural Grocers within 45 minutes of my home, I really can only afford a Walmart budget 3 out of 4 weeks per month. When I started my health journey I was convinced I would only heal by eating 100% organic and 100% grass fed meat all the time. When I couldnt afford it, I felt like a failure and that I wasn't healing the "right" way. Truth is I have put a lot of my Hashi symptoms in remission by cutting toxins from my products, going gluten free and cutting out inflammatory foods while only eating the "perfect" foods a few times a month. . This option at Walmart allows me to eat some of what I considered the best at the start of my journey, but at a price I can swing weekly!!! That is pretty fricking AWESOME!!!

And that’s a wrap! ... except it’s not. But that’s OK #positivepost Remember in my first post on this journey I said that #autoimmunedisease also has fun, exciting, free, victorious, and celebratory days? Well, the last few days I’ve been {cautiously} celebrating. I’ve been on #steroids for 2 months as of today. For the first 6 weeks, every good day, painless meal, and restful sleep brought false hope that was quickly crushed with the return of familiar symptoms. For 6 weeks I took 1 step forward only to take 2 very depressing steps back. I didn’t share before but after my last appointment in October, my gastro basically said my next step after finishing the steroid course would be to start regular #humira injections. This was not a surprise but what I didn’t know until that appointment was that if I started Humira, I could never stop. I believe Humira is a wonderful medication that has helped countless people but due to my age, other health considerations, and our plans to eventually start a family, the news shattered me and so began 4 weeks of internal struggle. Every single ‘good’ day I would think, “ok, here it goes, the steroid is finally working, I’m going to be able to avoid #biologic meds”. Which made every single bad day weighted with not just the simple fact of feeling like crap (#crohnspun ), but also the looming possibility that I may not be able to avoid biologics after all. The last 2 weeks, though, have felt good... with many milestone steps forward and very few steps back. So after making my case, my doctor agreed to extend my steroid course another 4 weeks. Cranberry sauce and turkey are one of my favorite Thanksgiving combos, and I was determined to find a way to keep this Thanksgiving classic on our dinner table this year! . Orange Cranberry Sauce 🌿12 ounces fresh cranberries 🌿1 cup water 🌿½ cup honey 🌿1 lemon (rind + juice) 🌿1 orange (rind + juice) . Add cranberries and water to a pot and begin to simmer. Once cranberries begin to pop/break through their skin, add honey, grated lemon rind and juice, grated orange rind and juice. Stir to combine. Continue to stir until desired consistency is reached. Note: This last step really depends on the temperate (simmer versus low) you use to cook. Many cranberry recipes say to cook for 15 minutes. I had mine on a true simmer and it took 30 minutes. The key is to get that thick almost jelly-like texture. . Also, this sauce is super easy to make ahead a couple of days before Thanksgiving and/or freeze. . After my morning routine I always get some exercise in. Don’t worry I wore a shirt! 😂 I know for people with Rhuematoid Arthritis it is especially important to get your joints moving. For moodiness I know that it can put me in a better mood as well and give me a more positive outlook. The pain and fatigue in my body can sometimes make peeling myself out of bed hard but it’s worth it. It is SO hard to get on a routine. I am completely a creature of habit. If I start going to the gym I go everyday and if I skip a few days then it can take MONTHS to get me to go back. Right now I am going everyday 💫 What is your gym routine? Do you find it helps with inflammation?

Well this is real life right here! I take a couple days of eating whatever I want and I literally gain 6 lbs within days. Lose any definition I was gaining! I know it’s because of POTS this happens too me. My belly bloats so bad so easy. It’s 7 on a Friday night and I’m going to push play and sweat for a few!! My goal of losing 10 lbs before sailing tomorrow did not happen!!! In fact I may have gained 10😂😂😂😂 Thank Goodness this is a lifestyle because where in the hallelujah would I be if I just let POTS take over and not do anything?
Who else has had a doctor try to force an anti-depressant medication on them?💊 🦋 I hit my healthcare deductible pretty quickly after my accident having spent a night in the hospital and running 2 CT scans and an MRI.  I went to doctor after doctor and none of them really had any answers for me.  So, I started seeking second, third, fourth, fifth, opinions. 🦋 My sister pointed out that eye issues are commonly associated with thyroid disease.  It had been close to 2 months post-accident and I still had no progress on my double vision.  So, I decided to visit another endocrinologist, who was highly recommended by a family friend.  I wanted to ask some questions to see if there was any way my thyroid condition could be related to my lack of eyes healing. 🦋 I walked in the door and he was Dr. Dictator from the get go.  He hardly let me utter a word and completely dismissed anything I did manage to spit out.  At the end of what was a complete waste of my time – during a time that I really needed rest – I was told that I was just depressed and that he recommended that I consider getting on Prozac (an anti-depressant). He told me that it would “give me more energy”. The quote I share in the picture of this post was taken directly from my patient notes. 🤦🏻‍♀️ 🦋 He scribbled away on his prescription pad and sent me on my way with a slip of paper.  I had never been so angry in a doctor’s office in all my life.  All the things that people had warned me about in the books I had read were true… doctors continue to just slap more prescriptions on you because they don’t know what else to do, they don’t know how to “fix” you.  This particular doctor didn’t even give me the time of day and he knew everything… 🦋 Needless to say, I labeled him as a Dr. Orange Cone and I never returned to see him.  I’m glad I didn’t have to pay any money out of pocket for that visit!🤣
Just a girl and her pump in home depot!! Infusion day for me. I know this is off track from what usually post here. When i was finally diagnosed with #wegenersgranulomotosis in 2006 i kept gettimg infection after infection , sometimes even septic which landed me a room in the icu of @universityofpennhospital. It took many many doctors and many different hospital stays across the U.s. to figure out that i actually was born with a piece of my immune system missing . This is what they believe triggered my wegeners . If you feel sick or are continually not feeling right keep going to the doctor until they figure it out. Because i went to university hospitals now the first thing they check for is wegeners when someone has chronic sinus issues ! Now people wont have to suffer and wont have so much damage done to their bodies from this awful disease! You know your body ! Bueller? ... Bueller? ... Bueller? I LOVE this movie. After my accident, this quote couldn’t have been any more eye opening. I wasn’t taking my health and healing seriously and the universe had other plans for me. It forced me to stop, slow down and pay attention. I was living a very stressful, fast-paced lifestyle, as many of us do. I was always focused on doing, doing, doing. I took so many things for granted and it was my wake up call. Since then, my whole life has changed. I will be sharing more about my road to recovery not only from my brain injury, but from my life itself. Now a days rather than focusing on doing, doing, doing, I’m putting all my energy into who I WANT TO BE. Thank you all for your 💗 and support. I was a failure as a mom. ⠀⠀ That’s what I thought when I was in my worst autoimmune flare. ⠀⠀ I thought I was a failure as a mom since I could no longer do active things with my children. ⠀⠀ Prior to my rock bottom, I would take my kids on bike 🚲 rides, play ball ⚾️ with them at the park, take them ⛰ hiking, drive to the beach 🏝 for the day with them, and so on. ⠀⠀ A couple years ago, I even took them to the Grand Canyon for a few days by myself. It was amazing! ⠀⠀ Then I found myself at a point where I could no longer physically do those things. ⠀⠀ I was 💔 heartbroken. ⠀⠀ I knew I needed to rest if I had any hope of finding wellness again. ⠀⠀ I would lay down in my room with my blackout curtains down and try my hardest to let my body rest. ⠀⠀ It was miserable. ⠀⠀ I hated it. ⠀⠀ I missed everything I used to do with my kids. ⠀⠀ And they missed me. ⠀⠀ Then I had a 💡 realization. ⠀⠀ Just because I needed “rest” did not mean I had to lay down in a dark room 🙄 by myself. ⠀⠀ I decided to think outside the 📦 box. ⠀⠀ I racked my brain and came up with things I could do WITH my kids AND still allow my body to rest. ⠀⠀ Were these things my first choice? ⠀⠀ Nope. ⠀⠀ Would I rather be at the beach 🏖 with my kids? ⠀⠀ Absolutely. ⠀⠀ But taking my kids to the beach does not 🙅‍♀️ make me a “good” mom. ⠀⠀ Loving ❤️ my children, supporting them, laughing with them, encouraging them, teaching them life lessons...those are the things that are important to me as a mom. ⠀⠀ I realized there are many ways to accomplish those things. ⠀⠀ There are many ways I can show up for my kids. ⠀⠀ I stopped 🛑 comparing myself to other moms. ⠀⠀ The truth is no mom has it all together. ⠀⠀ The truth is we are all simply doing our best. ⠀⠀ The truth is we need to love 💕 ourselves regardless of physical limitations. ⠀⠀ The truth is we are more than enough...even during an autoimmune flare. ⠀⠀ Here is my list of restful things we can do with your kids, while letting our bodies rest. ⠀⠀ What are your favorite ways to spend time with your kids while you rest? RECIPE BELOW // From-Scratch Salmon Chowder. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This recipe is a favorite from The Autoimmune Paleo Cookbook – a tender, from-scratch version of salmon chowder. If you are wondering about sourcing the salmon carcass, ask at your local fish counter to see if they have any available for purchase. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS 🌿 1 salmon carcass–bones, head, tail 🌿 1 litre water 🌿 1 bay leaf 🌿 2 tbsp solid cooking fat 🌿 1 large onion, chopped 🌿 4 cloves garlic, minced 🌿 4 parsnips, chopped 🌿 3 carrots, chopped 🌿 2 ribs celery, chopped 🌿 1 tbsp apple cider vinegar 🌿 1 tbsp chopped fresh thyme 🌿 1½ tsp sea salt 🌿 1½ lb salmon fillet, skin and bones removed, cut into 1½-in chunks 🌿 1 cup coconut milk 🌿 ½ lemon, juiced (about 1 tbsp) 🌿 3 green onions, thinly sliced ⠀⠀⠀⠀⠀⠀⠀⠀⠀ INSTRUCTIONS 👉 To make the broth, place the salmon carcass, water, and bay leaf in a stockpot, bring to a boil, cover, and turn down to a bare simmer. It is essential to cook this at the lowest simmer possible. Remove and discard the carcass and bay leaf. Strain the broth into a large bowl and set it aside. 👉 Heat the cooking fat in a heavy-bottomed pot on medium heat. When the fat has melted and the pan is hot, add the onion and cook for 5 minutes, stirring. Add the garlic, and cook for another couple of minutes, until fragrant. Add the parsnips, carrots, and celery; cook another 5 minutes, stirring, until the vegetables are lightly browned. 👉 Add the reserved fish broth, vinegar, thyme, and salt to the pot and bring to a boil. Cover and turn down to a bare simmer, and cook for 30 minutes or until the vegetables are tender. Place 2 cups of the soup in a blender, leaving the carrots behind, if possible as not to turn the soup orange. Blend until smooth, then add the purée back to the soup. 👉 Add the salmon chunks and coconut milk to the soup and cook for a few minutes, just until the soup is piping hot (do not let the soup boil). In my 27 years on this 🌏, there honestly hasn’t been a time where I’ve been SUPER confident in + loving to my body. ⠀ ⠀ Maybe it was the multiple surgeries I’ve had that have left physical, mental and emotional scars. ⠀ ⠀ Maybe it was comparing my more athletic build to other girls in high school. ⠀ ⠀ Maybe it was getting diagnosed with #crohnsdisease and feeling betrayed by my own body. ⠀ ⠀ Maybe it was seeing the fluctuation that my body could go through because of medications and #inflammation . ⠀ ⠀ Maybe it was not recognizing myself when I looked in the mirror because of the weight that I’d gained (due to #Crohns ). ⠀ ⠀ Maybe it was knowing that I was doing “everything right” for my health and still seeing how my body wouldn’t respond in the way that I wanted it to. ⠀ ⠀ Maybe it was a little bit of all of that. ⠀ ⠀ But what I know for sure is this: you can’t HATE or FIGHT your way to #healing OR health. ⠀ ⠀ Hating your body and fighting your #chronicillness only brings you FARTHER away from both of those things. ⠀ ⠀ I know because I’ve been there. (And still am at times 🤷🏼‍♀️) ⠀ ⠀ The more we hate, fight and resent what is happening to us... the stronger it gets. I hear all the time I need to share more of my meals because it motivates others to make healthier food choices. We’ll I’m all about inspiring others to become the best version of themselves.. so here ya go! - Easy. Quick. Thrown together - Honestly this is what most of my meals look like.. everything left over in the fridge thrown on a plate. - Tips on building the perfect plate - 1) Add protein {chicken, steak, beef, pork, eggs... whatev} 2) Add as many colors.. apparently tonight mine is orange #goClemson but don’t forget #greenshitonyourplate 3) Add Carbs - sweet potato, squash, carrots, rice, etc. The amount will vary depending on your goals, performance, metabolic history, underlying gut issues. 4) Add fat- cook protein in grass-fed butter or ghee {if you’re lactose intolerant}, drizzle avocado oil over greens, add nuts/seeds, slices of avocado, or cheese. - Next time you build your plate see if you can mark off all of these components. If you begin to eat this way I guarantee you’ll regain energy, cravings will disappear, eliminate bloating.. and you’ll start to love the way you look!! - Hope this was helpful! This is me the morning I was released from the hospital, don’t I look good?!?!🤕 I was hoping that when I awoke that morning, that my double vision would be gone.  It wasn’t.  The doctors didn’t have any answers for me.  In fact, my discharge paperwork said something along the lines of “this will resolve within 7 days.” It didn’t.  They gave me a gauze eye patch and sent me on my way. While I was at the hospital, I had two CT scans, a regular one and then another with iodine contrast.  Not only was I exposed to radiation twice (so not good for the thyroid), but I was given a mega dose of iodine.  If you don’t know, iodine is a very controversial topic in thyroid health, and I’m sure having a mega dose of it to try and get my brain to light up on a CT scan didn’t help my thyroid situation.  At the time, I had no idea what “contrast” even meant.  I couldn’t even see straight, so I just let them do what they said, they were the doctor’s after all…  All they told me is that it would make me feel like I was peeing my pants – that was the only thing they were right about! 🤣 That can’t be good lol! At the end of it all, they couldn’t determine anything from the CT scans so I was sent back to Denver to see a neurologist a few days later.  I had an MRI (again with contrast but this time gadolinium). The verdict came out and I was diagnosed with 4th cranial nerve palsy.  I was told that I may or may not recover.  No one acted very optimistic, my future looked grim.  But, deep down I knew that they weren’t right and that I would heal.  I just had to dig a little deeper, which led me where I am today in my thyroid health...

#tbt to today marking 1 full year since I last took an immunosuppressant. This is the longest I’ve been able to maintain being in remission since 2006. Primarily through nutrition and lifestyle choices. The bodies ability to #heal itself is amazing! 💜 Weird things that I am #grateful for: 1️⃣ sweating. Cause that used to burn. 2️⃣ smiling. Yup. When my eczema was bad, it hurt to smile. 3️⃣ wearing all the sweaters. Different fabrics would be crazy irritating on my sensitive skin. 4️⃣ hair growth. Those medications had some horrible side effects including hair loss... 🙄 just keepin it real, yah know! 💜 Weird things that are scary: 1️⃣ washing my hands with unfamiliar soap. 2️⃣ reintroducing eggs. Took me 5 months to build up the courage to eat a damn egg! 😬 🍳 3️⃣ any recipe that called for squeezed 🍋‘s. Before I go on to discuss my natural journey, I want to be sure to clarify that I do as well take traditional medication! I can’t stress enough how important this medication is to me - It’s just not enough! This medicine took me from bed bound and exhausted, to almost 90% functioning. I’m looking for natural ways to supplement the gaps that this medication cannot cover. I still struggle with some inflammation, pain, fatigue, etc. I found Humira after being put on a medication called Methotrexate paired with Prednisone. It was a recipe for disaster for me personally! I felt no relief from my symptoms with the Methotrexate and the Prednisone just heightened my anxiety through the roof as it is a steroid. What traditional medication do you take for your autoimmune?

I haven’t shared a food pic in a while, so I figured this amazing meal from last night would be a good one to break that streak! . This was a meatless meal that actually tasted so, so good. (And was good for my wallet too - meat can get expensive!) . For my protein I baked some chickpeas and tofu to get them nice and crispy. . Then I sautéed some purple cauliflower, onions, garlic, white sweet potatoes, and red chard along with coconut aminos and sesame seeds. . The result was ah-mazing, and actually really filled me up! (And my husband loved to too, and when he loves anything without meat, that’s a win in my book!) . Do you eat meatless every once in awhile? What’s your go-to meatless meal?!
Hi everybody! I just want to tell you little about me. I’m a Swedish medical student and right now I’m writing on my x-work about thyroidea hormons. And I had hashimotos for years! I’m pescatarian and I eat fish, vegetables, fruit, nuts, eggs and drink coffee. Sometimes I also eat rye bread but I try to limit it. I cook all cabbage and broccoli if I eat it. Sometimes I use milk in the coffee and eat cottage cheese, cheese and quark as well. I followed a strict schedule to begin with and got rid of the dangerously high levels of antibodies. I have never had any special symptoms of my hashimotos but I had stopped growing in hight and my body didn’t consume the energy it should and I had problems getting warm again after beeing cold outdoors in the wintertime. I got my hashimotos when I was 12 years old. I could not eat so much without putting on weight and at this time I was training dance and classical ballet 6 hours every day since I wanted to become an professional dancer. 💃🏼👯‍♀️ What finally got rid of the antibodies was a hashimoto protocol where I under 3 weeks went on a well controlled ketodiet without red meat and only little but good fat. (fish avocado, nuts) without dairy, grain, nightshadeplants, cabbage, legumes, mustardflowers, fruit and eggs. I also had 2,5 g protein / kg body weight each day.
