AIP Day 1 Breakfast starts with a medium-rare Grass-fed Striploin steak and bowl of roast veggie Salad (No nightshades). I have devised a meal plan with 2 red-meat portions a week. Given that we are off whole grains, legumes and nuts for now, the meat is 1.5x the usual recommended palm sized portion. I wonder if that's too much. •AFFIRMATIONS• Spent yesterday with my husbands family + at the beach. I got to sneak away for a walk on the beach while carrying the baby in my ergo (weighted walks anyone? 😆🤷🏼‍♀️) and tried to whisper affirmations as I was reflecting on the changes my doctor and I are implementing to help with my elevated cholesterol, my almost diabetic a1c, high #hashimotos antibodies, and the fact that I’m struggling to lose weight from pregnancy for the first time in my life this time around. Affirmations are hard for me. Funny is I do them with my kids virtually every morning as of lately... starting each morning being silly with them + having them repeat after me “today is going to be a great day! I am brave, kind, smart, funny, I have an attitude of gratitude, God loves me and I trust him..” we add new things every day and it makes us all smile and sets the tone for the day. But for myself.. I struggle to believe them for myself. I feel silly and undeserving. I’m thankful for one of my favorite humans @sarah_y_fox who has been a role model of sorts for me in this area. She’s helped me “notice what I notice” when I try to fill my heart with gratitude and I feel resistance to the words I try to usher in. The brain is a funny thing. A tricky thing at times. One of the things my doc talks a lot about is mindset and how he rarely sees people heal from autoimmunity unless they’ve practiced gratitude and affirmations directed at their remission. I remind myself of Philippians 4:8 when I feel silly saying affirmations “Finally, brothers, whatever is true, whatever is honorable, whatever is just, whatever is pure, whatever is lovely, whatever is commendable, if there is any excellence, if there is anything worthy of praise, think about these things.” And I turn my focus back to the Lord and ask him to teach me in these seasons where my health is out of my hands but always in his, to not fret, to enjoy each change I get to make, to trust he has a purpose and plan for all of these things I endure. Straight from the Shopping Cart Chronicles 🛒 • This weekend's adventures in grocery shopping include some new products that I'll be trying out this week... Up first Lesser Evil's Paleo Puffs! I'm always so excited when I find a new paleo product on my local Canadian supermarket shelf. • The fam did a little taste test during this afternoon's "Stay inside and Avoid Cold" movie session (We watched Madagascar if you're interested). So back to the Puffs, I bought the No Cheese Cheesiness flavour... the verdict is they're fine. The fact is I've been living a cheezie-less life for sometime now. In my pre-paleo life I'd indulge in Cheeto here and there at a party (especially the crunchy kind 😉), but I never had them in my pantry at home. Long story short, the puffs were fun to try but I won't be adding Paleo Puffs to my weekly shopping list... not that there's anything wrong with them per se, it's just my idea of snacks have changed, I was much more satisfied with afternokn snack of roasted broccoli + cauliflower & ham than the Puffs. • #paleosnacks #tastetest #iloverealfood

I’m definitely making this again! Notes: some IDIOT (me) accidentally turned the fridge temperature dial to freezing and my rocket froze and then wilted when I realised. So I had to use an alternative but they say everything happens for a reason and I am glad it did because in my fridge was parsley and mint so I made a bed of herbs with lemon juice and salt and laid the potatoes on that and the fish on top of that and it was delicious! This was me half of my life. I know I’m not the only one who has experienced this. Chronic fatigue or even chronic illness/pain is very isolating. I know I felt very alone and misunderstood through it. It wasn’t until the fatigue turned into something worse, and then at that point I didn’t need to say anything for people to notice I wasn’t ok. I wish I had spoken up sooner and I wish I had gotten tested sooner. Maybe it wouldn’t have taken years for me to heal. But non the less that is what happened. Don’t do what I did and stuff it down. Your physical and emotional health is very important. YOU are important. Don’t brush it off, ignore it or put your health on the back burner. Be an example to your kids, to your partner, friends and family that you are important and your health is to be taken very seriously. . . On a lighter note, know this...Our bodies are stronger than we realize, so it doesn’t matter how long you have experienced BLANK. Or how painful it is or how much it’s affecting your life. Your body wants to heal and it can! After all, its are created by Father God Himself! Our bodies are capable of fighting off any diseases or virus that invades our body. All it asks in return is that you believe your body is fighting for your life and not attacking you. 💗
When I changed how I eat breakfast got weird. I ate all kinds of food not considered "breakfast" foods. . I ate leftovers from dinner and lots of random stuff. Plant based protein shakes are a staple for me. . After years of experimenting I discovered I can eat eggs that are from chickens not fed soy products. I don't eat them daily but I cook with them and usually eat them on the weekend. . This is a typical weekend breakfast. Eggs, white rice cooked in broth and sausage. I normally eat nitrate free sausage but can eat the real stuff occasionally. . Try new things and think outside the box if you're having trouble figuring out what to eat. . I always have some canned protein in my pantry for when I need to throw a meal together. • I’ve always loved oysters and that could be because I tend to be pretty zinc deficient...most people are. Spending time with my daughter, my mini me, my soul's mate, makes me so happy. Some days it is easy to be frustrated with her, she is two afterall 😉. The truth is, though, that she is also the one that often can pull me out of my funks just by being her. I love this little spitfire with every fiber of my being and feel so honored to be her momma! ❤ One of my goals this year is to focus on what makes me happy, and this little one is one main component to that!
Try this fresh herbs omlette with coconut yogurt and mint and strengthen your immune system! Ingredients are herb (dill, garlic chives, cilantro, parsley, spinach), egg, garlic, and spices (turmeric, salt, and pepper) and lettuce. Whisk the eggs and spices and add the chopped herbs and garlic to the mixture. Add the mixture to your pan and put it on the preheated oven. That's it! Favorite Side! . This roasted broccoli is super simple and so delicious. I’ve served this at some family gatherings and my cousin told me “I don’t even like broccoli but I love this broccoli.” And, my BIL (who doesn’t cook) asked me three times how to make it. It’s a staple in our house and we make it 2-3 times a week. So here’s the recipe! . Roasted Broccoli 🌿1 cup raw broccoli chopped into 1/2 inch to 1 inch florets 🌿1 TBS coconut oil 🌿1/4 tsp salt . Toss on a baking sheet and then cook at 425 for 20-25 minutes until crispy and browned in some spots. . Tidbits: (1)This is easy to double or triple. We make it 3 cups at a time for our family of 5. (2) If there’s any leftover, toss into a salad the next day. (3) See pictures for sizing on broccoli florets and doneness of broccoli. . Enjoy! . #broccolirocks #roastedvegetables

I’m a Swedish medical student and right now I’m writing on my x-work about thyroidea hormons. And I had hashimotos for years! I’m pescatarian and I eat fish, vegetables, fruit, nuts, eggs and drink coffee. Sometimes I also eat rye bread but I try to limit it. I cook all cabbage and broccoli if I eat it. Sometimes I use milk in the coffee and eat cottage cheese, cheese and quark as well. I followed a strict schedule to begin with and got rid of the dangerously high levels of antibodies. I have never had any special symptoms of my hashimotos but I had stopped growing in hight and my body didn’t consume the energy it should and I had problems getting warm again after beeing cold outdoors in the wintertime. I got my hashimotos when I was 12 years old. I could not eat so much without putting on weight and at this time I was training dance and classical ballet 6 hours every day since I wanted to become an professional dancer. 💃🏼👯‍♀️ What finally got rid of the antibodies was a hashimoto protocol where I under 3 weeks went on a well controlled ketodiet without red meat and only little but good fat. (fish avocado, nuts) without dairy, grain, nightshadeplants, cabbage, legumes, mustardflowers, fruit and eggs. I also had 2,5 g protein / kg body weight each day. What is your default with these choices? For most of my adut life it was to give up. When I was diagnosed with generalized anxiety disorder and then Hashimotos, I gave in to the diseases. They really were controlling me for the better part of last year until now. Well, I am ready to give it all I've got now. My professional life is now exactly how always wanted it to be so I need everything else to be better. . What sparked this on? I found out that my doctor is done practicing as of March. This was the third, and best, doctor I have seen. Conventional, but very open to holistic healing and definitely saw the results I got from changing my diet. Because I know he was one of a kind, I need to find someone new. I am on the lookout for a functional doctor because I still have some nagging symptoms I need to get to the bottom of. I am so ready to be completely in remssion that I am willing to give it all that I've got!!!

I can’t believe it’s already time to say goodbye. I have really enjoyed sharing this supportive AIP space with all of you this week. While it has been scary opening-up about my experiences with Breast Implant Illness and my autoimmune conditions (especially Lichen Sclerosis), I have been blown away by your encouragement and support. * What I have learned from over two decades of living with autoimmune disease is that it is so important not to let your disease/s define you. When someone asks me about myself, my autoimmune diseases do not even come-up because I am so much more than my diseases. * Last year I made the mistake of having my New Year’s resolution be to “cure” my diseases and focused nearly all of my attention on doing just that only to have it turn into one of my “sickest” years to date. The stress of feeling like I needed to cure myself snowballed into flares and an overall degradation in my quality of life. * Luckily I noticed that what I was doing was detrimental and made the decision to enhance my health by shifting my focus to being happy…I learned to co-exist with my conditions and appreciate them for what they were teaching me (not an easy task) while still striving for improved health. * I also encourage you to honor your need to rest. Don’t feel like you need to be Super Woman and push-through when exhaustion hits because it will pull you further down the rabbit hole. I always have some canned protein in my pantry for when I need to throw a meal together. • I’ve always loved oysters and that could be because I tend to be pretty zinc deficient...most people are. Something I've been thinking about a lot lately is the easy way out. From an evolutionary perspective, the easy way out (or the path of least resistance) is what got us where we are today. This is great because most of us are awesome humans, except for the way that this plays out in our modern lives. Most people want the quick fix or the most benefit for the least amount of physical and mental energy (I see this ALL THE TIME in patients whether they realize it or not). It's so much easier to pop a pill than it is to do a little extra work to cook or the internal work we need to do to confront what's really going on inside of us. Everything from not being willing to give up certain foods to not wanting to go to a counselor to not following up with your healthcare provider. All of these are the easy way out. Real health and real results happen when you work at this stuff daily rather than looking for then easiest, shortest path. 😘

Recipe: 1 cup of organic chia seeds, 1 cup of regular organic coconut milk 1 can of coconut milk (also use the cream that sits on top) 1 small juice of a fresh lemon 1/4 cup of coconut sugar First you add all ingredients, except chia seeds, in the blender. Blend until it all comes together, should be a thin liquid. If it’s super thick like a smoothie, add more regular coconut milk. Once it’s at the right consistency, pour into a bowl and then add chia seeds. lightly stir, and then let it sit in your fridge for a couple hours! Once it has formed up, into a cottage cheese/jello texture. It’s ready to be served! I added blueberries and strawberries on mine but you can add whatever you want!! . . So thankful for my days being easier on me. Which gives me the opportunity to document and capture my recipes for you! I am So excited to be feeling better! I know food has a huge part of my healing and that’s why I want to continue sharing with you recipes that I eat at home. Plant based recipes may look hard or fancy to you but it’s really not. Did you know artificial colors in food can interfere with your body being able to properly digest protein? (+it can cause a relapse in SIBO)⠀ .⠀ In optimized physiology, a protein is properly broken down into various amino acids by digestive enzymes.⠀ .⠀ The digestive enzyme ✺ trypsin ✺ cuts the initial bonds beginning the break down of a protein into peptide. The peptide is then further broken down into an amino acid that can then be absorbed in the GI tract.⠀ .⠀ However, when an artificial color molecule is present, it covalently bonds to the digestive enzyme (trypsin) and the consequence is trypsin is unable to cut the bonds to begin the breakdown of the protein into a peptide.⠀ .⠀ ❌This results in large proteins that accumulate in the gastrointestinal tract and cause inflammation.❌⠀ .⠀ This inflammation can then lead to the opening of the tight junctions in the gastrointestinal tract, also known as intestinal permeability or ‘leaky gut’ and trigger autoimmunity or relapse in SIBO.⠀ .⠀ In addition, many people with irritable bowel syndrome (IBS) and / or small intestine bacterial overgrowth (SIBO) at some point in their journey have found limiting specific foods (perhaps grains) resonates with them and may find they consume higher amounts of protein.⠀ .⠀ If this is the case, watch out!
