It’s C O L D out. 🌬We are in Vata season right now, with kapha season soon approaching. It’s cold and dry on some days but cold and damp on others. My top tips for this season are to eat warm, grounding, stimulating foods. Oats for brekky have been a staple of mine all winter. Simple, hearty and nutritious. Adding things in like mashed sweet potato, banana, cacao powder, maca, cinnamon, ginger, chia, flaxseeds and other bits and bobs keep things interesting! Roasted Eggplant with Sun-dried Tomatoes and Cannellini Beans 🍆 Are you meal prepping this weekend? Get a huge eggplant, an onion, a jar of sun-dried tomatoes, a can of cannellini beans, and, if you don’t already have them, olive oil, oregano, crushed red pepper flakes, and some rice or quinoa. Roast everything except the tomatoes and beans with a ton of olive oil at 400 degrees for about 20-25 minutes.
