Lately I’ve been experimenting with different Christmas decorations for cakes. This is rosemary (fresh from the garden) coated with a sugar syrup & then rolled in sugar. We don’t get fresh cranberries here at this time of year, so I added fresh pomegranate seeds instead. 🎄
I made cookies for Santa! Snickerdoodles, peanut butter blossoms, and soft batch sprinkle cookies.🍪

Sharing my Vegan Saffron Scrolls recipe - from Naturally Sweet Vegan Treats - in time for our Swedish Lucia festivities this week... and I’m so excited! But I'm especially looking forward to baking along with any of you who are keen!

Makes 30-40 buns
250 ml plant milk
350 ml oat or coconut yogurt
125 ml olive or coconut oil (+ 60 ml extra)
50 g fresh yeast or 14 g instant dry
75 g coconut sugar (+ a little extra, optional)
1/2 tsp ground saffron
950 g bread flour
1/3 tsp salt
300 g pitted dates
150 g almond meal
60 ml coconut cream

But if you’re looking for a gluten free option, try mixing some of King Arthur’s gluten free gingerbread crumbs with some whole wheat flour. It’s not the same, but you’ll get a similar taste! These waffles are so cozy and taste just like gingerbread cookies. 😭
