They're a Peruvian shortbread sandwich cookie I grew up eating and they're stuffed with homemade dulce de leche. Yeah...we should do a dulce de leche donut...with shortbread cookie crumble...wait, sorry, how did I get back on donuts?? 😆
Recipe for COOKIES is linked in my profile- these ones are plain/traditional and amazing, but I also show you how I like to dip them in dark chocolate and sprinkle them with crunchy sea salt. You definitely need to try them both ways!
Speaking of fig jam (previous post 👀), another good reason why you should stock up on the homemade treat while figs are in season is that it would basically enable you to make these Fig and Hazelnut Financiers all year long. No fresh figs available? Simply top the financiers with a spoonful of fig jam. Problem solved! 🙌🏼

It is not a secret that I love coffee, nor that I love using it in desserts.
Back when I started drinking coffee, I used to love flavoured coffees, and especially latte macchiato.
Although today I prefer doppio espresso without any sugar or milk, sometimes a flavoured latte macchiato can be a nice change, especially if flavoured by freshly made caramel sauce.
Coffee and caramel make for such a wonderful flavour pairing, so it is only natural to make it into a charming little cake, perfect served with strong espresso, and additional homemade caramel sauce.
The richness of the caramel filling is cut by the flavourful espresso cake layers, yet delightfully balanced by the fragrant vanilla syrup. A complete dessert experience for coffee lovers.

FRENCH MERINGUE & MACARONAGE:
I always use room temp, aged egg whites. And I use a hand mixer since my stand mixer is too large for the small batches I make. Beat the meringue until it’s smooth, glossy, and stiff. See the stiff mini peaks on the beaters? From what I’ve seen, a sturdy meringue gives me sturdy shells. *However* do not over-beat the meringue either—it really is a fine balance 😫 Just gotta practice and discover what’s right for your recipe 🤷♀️.
Add the meringue into the dry ingredients and begin to fold. Once it’s distributed, begin to deflate the batter by pressing it against the bowl with the spatula. You’ll see that it goes from lumpy and thick, to glossy and free-flowing. Again, it’s a fine balance between under and over mixed. Watch the ribbon of batter fall from the spatula and form mounds. Those mounds should sink and somewhat disappear within 10-15sec.
Hey, if you’ve got a recipe that creates a thick, matte batter and you like oblong shells instead of circles, yada yada, whatever the case...if they taste pretty dang good and you like how your macs look, then don’t change a thing!

Para esta receta puedes usar las rosas de tu jardín! (Siempre y cuando no les hayas puesto pesticidas) sólo ponlas a secar cuando veas que ya se están marchitando. Para los que no tienen rosas (como nosotras😜) puedes comprar los botones de rosa ya secas en www.galatea.cl MERENGUITOS CON CHOCOLATE BLANCO Y POLVO DE ROSAS
120 grs de claras
240 grs de azúcar
250 grs de chocolate blanco repostero
25 grs de flor seca de rosas www.galatea.cl
1. Precalentar el horno a 90°C
2. Hacer un merengue suizo: en un bol poner las claras junto con el azucar y ponerlos sobre una olla a baño María, revolver con un mezquino para evitar que las claras se cosan. Sacar del fuego cuando los cristales de azúcar se hayan disuelto y batir enérgicamente con la batidora hasta que el merengue haya enfriado (el tiempo que demore dependerá de la potencia de tu batidora)
3. Sobre una lata de horno poner el papel mantequilla.
4. Poner el merengue dentro de una manga con una boquilla lisa de 1 cm de diámetro y hacer los merenguitos.
5. Hornear por unos 30 min aprox o hasta que estén secos y fáciles de despegar del papel mantequilla. Reservar.
6. Aplastar con los dedos las flores secas para lograr un polvo grueso. Reservar.
6. Derretir el chocolate blanco a baño María.
8. Undir los merenguitos en el chocolate blanco y espolvorear con el polvo de rosas. Dejar sobre una superficie lisa y limpia para dejar enfriar. Listo a disfrutar!

If you don’t have Pumpkin 🎃 spice in your part of the world, you can make it yourself with this easy recipe. Great addition to your pancake mix, porridge, lattes, smoothies, baked goods etc... For recipe 👇🏼.
Pumpkin Spice recipe .
2 tbsp Cinnamon
1 tsp Ginger
1/2 tsp All Spice
1/2 tsp Nutmeg
1/2 tsp Cloves
Mix it all together and add to whatever you like. For example 1/4tsp to you smoothie or porridge.
