My kiddos always want to get their hands on something sweet that I’m making, but as we all know- there’s a time and place for everything! Without over indulging too much, I try to make their sweet treat (and mine!) a healthier one. Thought I’d share my go-to wholesome muffin recipe as I wait for these guys to bake! They freeze wonderfully too; I take a few out while I’m making dinner, so that they’ve thawed out for after 😊 They’re great as a breakfast/brunch option as well- delicious out of the oven served with a little butter on top. 1/2 cup whole wheat flour
1/2 cup bran (can be wheat or oat)
2 tsps baking powder
1 tsp baking soda
1/2 tsp salt
1.5 tsp cinnamon
1 cup sour cream
1/3 cup coconut oil (can use vegetable oil)
1/2 cup honey
1 tsp vanilla
1 apple, shredded
1 carrot, shredded
1/2 cup raisins
1. Preheat oven to 350F, grease muffin pan
2. In large bowl, whisk together all dry ingredients
3. In separate bowl, whisk together sour cream, oil, eggs, honey and vanilla.
4. Add wet ingredients to dry ingredients and stir until just combined. Fold in apples, carrot and raisins
5. Divide batter between the twelve muffin cups
6. Bake for 20-25 minutes (or until toothpick inserted in centre of muffin comes out clean)

S’mores Brownies will be back at St Ives Farmers Market on Saturday and Cambridge Market on Sunday! I made myself one of these baked Alaska style for my breakfast on NYE with a good glug of Creme de cacao blanc in the Italian meringue and a giant scoop of phish food ice cream and I’m very tempted to do make something similar for this years Mash-Up Market!

Go elf yourself you mean macarons! I’ve been trying to make them perfect since a while now and nothing seems to work; over-mixed, under mixed, too dry, too wet, too hot, not hot enough 🤨🤨 I need a break! Anyone else there also pulling their hair out? #macaroonfail
