And some super fun ugly sweater sugar cookies for the kids to decorate 😂🙌🏼🍪 Baking day looks so much different this year than it did a few years ago... New state, new friends, much less WORK! 🤣
Me and my college besties had this tradition to get together (all 5 of us) to each bake 2 recipes that were always doubled!!! As we kept popping out babies can u imagine the work in that day!? We were there from 8am-8pm easily! With ONE oven! 😳
But those are priceless memories with the ones I love and cherish and miss.
My take home message is ... change is good... less is more... this rings true more during the holidays for me than any other time of year.
I don’t want each night of my calendar jam packed. I don’t need a Christmas shopping list that equals my monthly budget. I want intimate time and cherished time with my family. I want my children to know the reason for the season ✝️ And of course some festive fun along the way.
This year baking day was about new traditions. Intimate time with a few friends. Enjoying our community gold cart parade that went by at night eight outside our door. With the smell of cinnamon and chocolate and caramel in the air.

I usually keep one staple (this year the pb blossoms) and mix in 2 more unique but sensational ones. I’ve made the salted caramel ones 2x now. They are amazing. Note: cut the caramels in half for smaller cookies.

Had one of my favorite quick breakfasts on the way out this morning- matcha muffins! Here’s how I make them!
2 cups flour @bobsredmill
1 tbsp matcha powder @soarorganics
3 mashed bananas
1/2 cup crushed walnuts
1/4 cup coconut oil @vitacoco
1/4 cup almond milk @califiafarms
1/2 cup agave
2 tbsp vanilla
1 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
A pinch of salt

Simple and Easy Low Sugar Gingerbread Cookies for the win!
These delicious little morsels only contain 1/3 cup of brown sugar in total which is just over 1 gram per serve.
But don’t let the low sugar fool you into low flavour they are still sweet enough and have that flavourful trademark spicy festive taste.
Santa will just adore having these Christmas Eve and the kids will love making them for him!

Live life on the veg
2 medium sweet potatoes
1 +1/4 cup oat flour
14 medjool dates (pitted)
4 tbsp of raw cacao
3 tbsp of pure maple syrup
1 tsp cinnamon
Roast the sweet potatoes by wrapping them in aluminium foil and baking them in the oven for 60 minutes (or until really soft and starting to caramelise) at 180 C /360 F
Once roasted, remove the sweet potatoes from the oven and the foil after leaving them to cool for a few minutes, remove the skin by peeling it off.
Mash the roasted sweet potato with the back of a fork until completely smooth
Add the mashed sweet potato to a food processor with the pitted dates Transfer this mixture to a bowl and mix in all other ingredients.
Place into a lined baking tray and cook for around twenty minutes, until you can pierce the brownies with a fork bringing it out dry.
Allow it to cool completely before slicing and enjoying.
