I always make banana bread when I'm visiting my fam. This beauty is #vegan #glutenfree
. It's heavenly toasted topped with peanut butter, sliced banana + a delicate drizzle of maple syrup.
🍌Vegan B Bread🍌
5 small overipe bananas (or 3 large)
2/3C almond meal
1C coconut flour
1/2C each dates & walnuts, chopped.
350 ml coconut cream
3 chia eggs (1 tbspn chia + 3 tbspn water - sit for 10 mins)
3 tbpsn pure maple syrup
1 tspn each: cinnamon, vanilla paste, bicarb/baking soda.
Pinch of salt.
1. Mash banana with coconut milk & maple syrup.
2. Stir in chia mixture. Then dry ingredients.
3. Mix in chopped walnuts & dates (or chocolate chips!)
4. Line loaf tin, transfer batter & bake in preheated oven until cooked through*.
*Bake @ 170°C for 60-70 mins.
This bread is energy dense, full of #fibre
