Pretty pleased with how these racks came out for sure. The taste and tenderness were right on. One rack was rubbed in @gquebbq #therub
(not pictured because I used it all) and the other in @tennessee_mojo_bbq #bbqmagic
(which I’m overdue for a reorder). They were smoked at 225 over @fogocharcoal
with some apple and hickory chunks ~ I wrapped at about the four hour mark as they were about as dark as I wanted them. Then I added some @kerrygoldusa
butter and @aframesauce
to the wrap for about 1.5 hours. Finished them up with a light glaze of @gentrys_bbq #tennesweet
and let the sauce set for about 15 mins before serving.
