Creamy Verde Enchiladas😍😍
-1 1/2 cups shredded rotisserie chicken
-1/2 cup roasted corn
-1/2 cup black beans, drained
-1 tsp. Cumin, chili powder, onion powder, garlic powder, salt, pepper
-1/4 cup chicken broth
-1 dollop sour cream
-1 Tbsp. Cream cheese
-1 to 1 1/2 cups Favorite verde sauce
-1/4 cup chicken broth (or just extra verde)
-shredded cheese for top
1. Preheat oven to 350. Put roasted corn, chicken, beans and seasoning in a small pan with chicken broth or extra verde. Cook until warmed, add sour cream and cream cheese. Set aside after thoroughly mixed.
2. In a dry pan or over burners, toast tortillas until soft and a little toasted(it’s okay to have dark burn spots).
3. Fill each tortilla and roll, place into greased pan. Once filled, add verde over the top of the tortillas and sprinkle shredded cheese.
4. Bake until cheese is melted. Top with whatever you’d like, lettuce, sour cream, tomatoes, etc!
